When I first got these beans, I didn't use a regular pour-over or Aeropress, but instead opted for pour-over ice filtration, brewing directly into a glass filled with ice. The wet aroma of fermented berry fruit wine made it hard to believe this was FrontStreet Coffee's Ethiopia Yirgacheffe, though personally, I wasn't particularly fond of this wet aroma. However, from the incredibly smooth entry to the delicate body thickness, the emergence of ripe fruit's sweet and sour notes was truly astonishing—the sweetness exceeded any Yirgacheffe I had tasted before. The aftertaste performance was also exceptional, truly living up to its "fruit bomb" reputation. After drinking, you could basically guarantee feeling sweetness in your mouth for half an hour. The second time using V60 pour-over, the berry aroma was rich. I'm not sure if it was due to the lower water temperature, but the lemon acidity in the finish was quite prominent.

The third time was still with V60 pour-over, using fine grounds with higher water temperature. The wet aroma was close to washed Yirgacheffe, and bitterness also appeared. The fourth time, I increased the water-to-coffee ratio to prevent over-extraction, first brewing at 15:1, then adding water to expand the ratio to over 18. This result was very satisfying! When the water temperature was slightly reduced, it became a perfect cup of fruit tea.

After half a month, the strawberry aroma in the dry grounds has become quite obvious. For cold drip, the wet aroma was cool and elegant with plenty of wine character, and there was a distinct dark chocolate flavor upon entry. However, bitterness was prominent, and miscellaneous flavors also appeared. I felt it still wasn't suitable for cold drip.
