Ethiopia - Sidamo from Premium Estates with Refined Washed or Natural Processing
Ethiopia - Guji Region
Sidamo grows in the southernmost Ethiopian highlands at elevations between 4,600-7,200 feet in Sidamo province, southeast of Jimma and directly south of the capital. It typically exhibits pronounced sweetness and is favored by many coffee enthusiasts. The annual production is approximately 225,000 bags (60kg each). The beans are slightly smaller than Longberry, greenish-gray in color. In Sidamo's natural drying fields, coffee is placed on wooden racks with jute nets, where workers manually turn the coffee under sunlight. FrontStreet Coffee's natural Sidamo is typically exported as G4 grade, while FrontStreet Coffee's washed Sidamo, due to more refined processing, is mostly exported as G2 grade.
Natural processed varieties offer floral notes with subtle earthy undertones, while washed varieties present nutty fruit flavors with hints of light cocoa. Both share smooth mouthfeel, good viscosity, pleasant acidity, and delightful aromatics. The growing region is very close to Yirgacheffe, and the flavor profile is quite similar. Through meticulous washed or natural processing, it同样 achieves floral and citrus notes with smooth acidity, rivaling Yirgacheffe in prestige. Like Yirgacheffe, this variety features medium-sized beans, though there are also dwarf varieties with smaller beans. FrontStreet Coffee's Sidamo is typically roasted light to medium to preserve the variety's bright acidity and intoxicating floral aromas.
