El Salvador's Finca Himalaya is located in the renowned Santa Ana region, situated on the Apaneca mountain range at 1500 meters altitude. It is one of the few estates managed by Aida Batlle, with Bourbon being the primary variety cultivated.
The coffee beans produced by this estate undergo washed processing at El Divisadero mill in Ataco, under the management of Mauricio Salaverria, followed by even drying on African raised beds through sun drying and ventilation. Mauricio inherited his parents' and grandparents' business, growing up with coffee from childhood, with particular focus on specialty coffee cultivation.

About Project Origin
Sasa Sestic, the 2015 World Barista Champion, launched Project Origin three years ago with his commercial team ONA Coffee. This project directly collaborates with coffee farming families in impoverished countries and regions, improving their production conditions and offering them purchase prices 20% above fair trade prices.
The project's founding mission also includes strengthening the connection between roasters and coffee farmers, while guiding farmers to cultivate high-quality coffee beans. To date, Sasa has established relationships with coffee growers from eight countries, including Brazil, Panama, India, Ethiopia, El Salvador, and Costa Rica.
