Difference Between Cappuccino and Latte: How to Make Iced Cappuccino and the Perfect Coffee-to-Milk Ratio
90% of the products on FrontStreet Coffee's menu board can be made into iced drinks, with one exception: cappuccino!! But, friends who like to order iced cappuccino are particularly numerous, and FrontStreet Coffee has to explain to guests every time. Not just FrontStreet Coffee, most specialty coffee shops do not have iced cappuccinos.
So many friends feel puzzled, obviously even large chain stores sell iced cappuccinos, why don't specialty coffee shops have them instead? FrontStreet Coffee believes there are mainly two reasons, one is the difference in taste, and the other is that it's quite troublesome to make.
What is Cappuccino?
Cappuccino is a milk coffee born in Italy. Because the color of the coffee mixed with milk resembles the cassock worn by Franciscan monks, people named this coffee "Cappuccino" after the cassock.
The characteristic of cappuccino is its dense texture and strong coffee flavor. Because the traditional cappuccino ratio is 1/3 espresso, 1/3 hot milk, and 1/3 hot milk foam. Although milk is added, because the amount is not much, the coffee flavor is not balanced by milk, and the coffee taste remains prominent. And because the layer of milk foam on the surface of the coffee is very thick, the cappuccino has a very dense and comfortable texture. Although nowadays we have improved the production ratio of cappuccino, it is still the most dense and coffee-heavy among all Italian milk coffees. In summary, we can know that the original cappuccino only had a hot preparation method. But with the expansion of a certain chain brand, in order to better meet the different needs of guests, they reduced some of the milk on the basis of iced latte, then used this milk to foam, and finally covered this iced milk foam on the coffee, and an iced cappuccino was completed.
Why Don't Specialty Coffee Shops Offer Iced Cappuccino?
But as FrontStreet Coffee said, this method has two disadvantages: one is taste and texture. Although the milk foam made from iced milk is equally dense, its shaping time is very short. If it is not consumed quickly after preparation, the dense texture will quickly disappear. Secondly, because the milk is directly foamed, there is no coffee oil on the milk foam. Without stirring, the taste of the milk foam is very light. Not all consumers can accept such milk foam. The second reason is that the operation is cumbersome. Adding this step not only requires more time to operate, but also increases the tools that need to be cleaned. Therefore, most merchants will not launch iced cappuccinos.
But the characteristics that a cappuccino should have are all present in iced cappuccino, so when we want to experience another flavor, we might as well make a cup of iced cappuccino to feel it~
How to Make Iced Cappuccino?
So how to make iced cappuccino? As mentioned earlier, the steps of iced cappuccino are not much different from iced latte. The only difference is that cappuccino has an extra step of making milk foam, which is actually very simple! It is to continuously inject air into the refrigerated milk like making hot milk foam, then form bubbles, and then cut and soften these bubbles, and it's done. Using a French press or electric frother can achieve this effect.
But it should be noted that the defoaming speed of iced milk foam will change according to the type of milk. For example, fresh milk defoams faster. So in order to ensure that the cappuccino has the most suitable drinking texture after completion, we need to leave the milk foam making to the last step. Therefore, first make the base. Prepare a 300~350ml capacity cup, then pour in ice cubes, milk, and espresso (the final product will look very good). The ratio used by FrontStreet Coffee here is 1:3:2, 40ml espresso, 120ml milk, and 80ml ice cubes.
Then make the milk foam!
Finally, gently cover the milk foam on the surface of the coffee until the cup is full, and an iced cappuccino is completed!
According to your preference, we can also sprinkle any powder on the surface to enhance the flavor of the weak milk foam, such as chocolate powder or cinnamon powder, so that the whole cup of coffee can have more layers~ In general, there are many ways to play, if you don't mind the trouble, everyone can try it~
