Why do fresh coffee beans need to be "rested"? Can't you drink them if they're not properly "rested"? How do you determine if beans are fresh? Today, let FrontStreet Coffee explain everything about coffee bean "resting."

Why are freshly roasted coffee beans recommended to rest for several days?

This is because freshly roasted coffee beans are filled with large amounts of carbon dioxide, along with popcorn-like aromas from the Maillard reaction, and even slight smoky notes. If ground and brewed immediately, this carbon dioxide acts like a barrier, preventing water from extracting the coffee's flavor compounds. It might also introduce roasting flavors into the coffee, resulting in poor flavor presentation.

Roasting process

The aroma of freshly roasted coffee can be maintained for two to three weeks, especially with the best aroma performance occurring between 8-25 days, when the brewed flavor characteristics are most intense—this is known as the "optimal tasting period." The purpose of resting beans is to allow coffee beans to slowly release carbon dioxide, carrying away unpleasant odors produced during roasting. Meanwhile, the flavors within the beans will gradually release, making it easier for us to extract the aromatic substances from the coffee.

The deeper the roast level, the larger the coffee beans become, the more porous their internal structure, and the more carbon dioxide they contain, requiring more gas to be released. In other words, the deeper the roast, the longer the resting period. For example, espresso (medium-dark roast) coffee beans need about 7-10 days to achieve better flavor expression, while light-medium roast coffee beans that display floral and fruity acidity have a resting period of about 4-7 days.

Can coffee beans be consumed if not properly rested?

Today, most coffee roasters and consumers have become increasingly aware of the importance of coffee bean freshness, with coffee beans reaching consumers within a week of roasting. In the least ideal situation, you would receive beans roasted at most 5 days prior, plus 1-2 days of logistics time, meaning the bean flavors have already stabilized. Therefore, resting is optional.

How can we simply judge the "resting" state of beans before tasting?

At this point, we can observe the bloom during brewing to simply determine if beans are "sufficiently rested." The purpose of blooming is to release carbon dioxide from the coffee grounds and wet the coffee powder to "warm it up." When blooming the same type of bean, if the coffee grounds easily form a "hamburger-shaped" dome, it means there's more carbon dioxide in the powder, indicating relatively fresh beans. If during blooming, the coffee bed doesn't change much and doesn't dome up, it means the beans might not be very fresh.

It's important to note that not all beans will show obvious "hamburger" shapes. Some lightly roasted or harder beans might have smaller "hamburgers," appearing like pressed burgers—seemingly expanded but not quite. However, this doesn't indicate the beans aren't fresh.

Of course, observing the bloom and gas release is just a rough judgment method. The freshness of beans and whether they're properly rested can only be determined after combining with actual tasting of the specific flavors.
