Why Most People Prefer Hot Pour-Over Coffee

Compared to Americano, the hot and cold preparation methods for pour-over coffee have some notable differences. Cold brew requires sacrificing some hot water and replacing it with ice blocks at cooling temperature. These ice blocks don't participate in the extraction process but instead directly blend with the extracted coffee liquid.

Therefore, the flavor of ice pour-over is inevitably less rich than hot pour-over. The espresso extraction process remains complete, so unlike pour-over coffee, there are no differences in compounds or concentration. So why do people form such clear divisions?

Practice reveals truth. Let's make a cup of hot and cold Americano respectively. The easiest and most direct way to draw conclusions is through personal experience, isn't it~

Bean used: Warm Sun Blend, medium roast, with notes of sherry aroma, berries, chocolate, vanilla, and cream.

Extraction parameters: 20g beans, 30-second extraction time, 40ml liquid weight.

Hot Americano ratio: 160ml of 70°C hot water, 40ml coffee liquid.

Cold Americano ratio: 100g ice blocks, 140ml room temperature water, 40ml coffee liquid.

Preparation method: Both involve preparing the respective amounts of water in their cups in advance, then pouring the espresso directly over it after extraction!

Hot Americano: Rich and Complex

Hot Americano has a whiskey aroma. While not as prominent as single-origin coffee, it's still more easily captured by our sense of smell compared to cold Americano! The tasting experience leans toward dark roast coffee flavors: whiskey's fragrance, caramel sweetness, rich dark chocolate, and a silky texture, with vanilla cream notes emerging at the end.

Cold Americano is completely different - it lacks much of the bitter aroma, replaced instead by a touch of acidity, giving people a more refreshing tasting experience: the first to emerge is also whiskey's fragrance, followed by lively berry acidity, caramel sweetness, plus relatively weak hazelnut chocolate flavors, making the entire cup of coffee distinctly layered.

The Science Behind the Difference

As we can see, although hot and cold Americano only differ in water temperature, the changes are very significant. The main influence comes from our sensory perception - how we perceive flavors differently at various temperatures. High temperatures reduce our perception of sourness, while low temperatures suppress taste buds' reception of bitter signals, thus creating two completely different experiences:

Hot Americano: More stable flavor, rich texture, diverse changes.
