How to Make Whipped Coffee That Requires '400' Hand Whisks?
While surfing the internet, FrontStreet Coffee discovered a delightful saying: Dutch people in isolation play electronic music at home, Italians play instruments on their balconies to cultivate their artistic sensibilities, while Koreans in isolation all make hand-whipped coffee at home. This reminded FrontStreet Coffee of the "Dalgona Coffee" that became globally popular during the pandemic.
The phenomenon began when it appeared on a South Korean variety show called "Pyeonstorang" (Convenience Store Restaurant). Its simple preparation method led Koreans confined at home due to the pandemic to start imitating it one after another, determined to experience this coffee that requires hundreds of whisks! This led to the opening scene - the entire Korea became obsessed with making this whipped coffee. At one point, many people mistakenly thought this was invented by Koreans! But actually, it originated from Hon Kee Tea Cafe in the Macau Special Administrative Region of our country!
Hon Kee Tea Cafe is located in an abandoned shipyard in the Huanshi district of Macau. It was already very famous in earlier years! What makes this tea cafe most distinctive is the owner's use of hand-whipping to create specific coffee foam. The materials used are common instant coffee powder, mixed with hot water and sugar in a 1:1:1 ratio, then whipped continuously at high speed with a small spoon. As the number of whips increases, the originally liquid coffee begins to expand and its fluidity decreases! After about 400 whips, a cup of extremely dense whipped coffee is created.
The Science Behind Whipped Coffee
This makes perfect sense! After all, our country has quite an obsession with handcrafted products, such as Chaoshan's hand-whipped beef balls, Cantonese hand-whipped lemon tea, and Macau has hand-whipped coffee! Completely reasonable! The reason coffee transforms from liquid to "foam" is because compounds in instant coffee can combine with sugar, and then after whipping, tiny air bubbles are injected, forming cotton-like dense bubbles! This works on the same principle as frothing milk, and the same method can be applied to espresso and mocha! This means these coffees can all be used as materials for making "400-whip coffee"~
How to Make Hand-Whipped Coffee
As Koreans increasingly shared this on Instagram, our countrymen were also inspired. However, the preparation methods still have certain differences! So, how should we make a cup of hand-whipped 400-times coffee?
Coffee Preparation
Since we now mainly use freshly ground coffee, we'll use the espresso preparation method! Besides regular coffee materials, we also need to prepare: sugar (or any flavored sugar), an electric milk frother (friends with "qilin arms" can also do it by hand~).
FrontStreet Coffee first uses 20g of coffee beans to extract 40ml of espresso!
Then pour the espresso and 10g of sugar (already quite sweet, you can adjust this yourself) into a cup together.
Then take out our electric milk frother to whip!
(Although FrontStreet Coffee has one, FrontStreet Coffee wanted to try authentic hand-whipping. There's a good saying: You may not want to whip it yourself, but you can have your friends do it, so FrontStreet Coffee grabbed a lucky friend to participate in the whipping process) When the coffee transforms from liquid to smooth, fine, and shapeable "cream-like" consistency, the whipping is complete!
Leave it at the bottom of the cup and directly pour in 200ml of milk.
Complete! The friend who did the whipping can rest now, and the remaining tasting work will be handled by FrontStreet Coffee itself!
Take a spoon and stir the milk and coffee foam evenly (otherwise, drinking the foam alone would be quite sweet!). The drinking experience is a cup of silky smooth, rich and sweet latte! Very comfortable. The preparation method is really simple, you can try it at home when you have free time~
