Why Is Your Pour-Over Coffee's Flavor Blurry and Unclear? Common Causes and Solutions
Some friends encounter problems when brewing pour-over coffee, finding that the flavor of the brewed coffee is blurry and indistinct. At the same time, they're unsure what causes this situation. The Coffee Is Too Strong
If the coffee's concentration is too high, our taste buds and olfactory nerve cells struggle to distinguish the various substances within it. As a result, they mix everything together and send it to the brain, creating a sensation of blurry and concentrated flavor.
When brewing coffee, people tend to focus more on parameters without considering the coffee beans themselves, which easily leads to such problems. For example, while a 1:15 coffee-to-water ratio works for many coffee beans, FrontStreet Coffee has discovered through multiple brewing comparisons that coffee beans like Gesha and Yirgacheffe, which primarily showcase delicate floral and fruity acidity flavors, are better suited to a 1:16 ratio. Brewing the coffee slightly diluter makes the floral notes and fruity acidity clearer and more vibrant.
Therefore, if you taste coffee with relatively concentrated, blurry, and hard-to-distinguish flavors, and the taste isn't weak, it's likely because you've brewed it too strong. The simplest remedy is to add 10-20ml of water to dilute the concentration, and the flavors will disperse.
Additionally, you can appropriately extend the coffee-to-water ratio for future brews of this particular bean. For example, if using a 1:15 ratio results in blurry flavors, try using 1:16 or 1:17 next time.
Too Much Agitation During Water Pouring
When pouring water, we can increase the coffee's extraction rate through circular agitation, but if the agitation is too strong, it's easy to wash out some bitter and astringent undesirable flavors from the coffee grounds. This makes the coffee's flavor become muddled and blurry.
So if your usual pouring habit involves rapid circular movements with strong agitation, and your coffee flavors happen to be rather blurry, you should try slowing down your circular speed and reducing the agitation intensity.
Insufficient Bean Resting
When coffee beans haven't been properly rested, they contain abundant carbon dioxide, which affects the coffee's extraction. Typically, this manifests as weak taste, greenness, astringency, unremarkable flavors, and a sense of blur.
Therefore, FrontStreet Coffee suggests that friends check the roast date before brewing coffee to confirm whether the beans have been properly rested. Generally, coffee beans for pour-over brewing need 4-7 days of resting. After this resting period, some of the carbon dioxide in the coffee beans will be released, preventing the aforementioned undesirable flavor manifestations.
Using Pure Water for Brewing
Pure water is actually not suitable for brewing coffee. Coffee brewed with pure water will have indistinct flavors with a hollow sensation, and the mouthfeel will also tend to be thin.
Generally, water containing appropriate amounts of magnesium and calcium ions is more suitable for brewing coffee, as it can better extract the coffee's acidity, sweetness, and aroma.
