The Science of Coffee Temperature and Flavor

As coffee cools from hot to cold, some aromatic flavor compounds evaporate into the air along with water vapor. Therefore, cooled coffee has less prominent aroma, and because our sensory perception of the five basic tastes varies at different temperatures, cooled coffee tastes more acidic than when hot.

FrontStreet Coffee previously conducted an experiment of reheating cooled coffee. The reheated coffee was indeed less acidic, but the original aroma of freshly brewed coffee had disappeared. This indicates that the loss of aroma is an irreversible process.

The Insulated Bottle Experiment

Especially with the recent sudden drop in temperature, hot coffee cools down quickly. So can using an insulated bottle to keep coffee warm slow down the evaporation of aroma and flavor?

So FrontStreet Coffee conducted an experiment to test this. For coffee beans, FrontStreet Coffee chose a common Yirgacheffe Gedingding (washed processed). This coffee bean emits jasmine flower and citrus fruit aromas when hot, but these aromas become much weaker when cooled, while the sweetness of sugars becomes more noticeable. This transformation typically completes in about 1 hour at room temperature.

This time, FrontStreet Coffee poured freshly brewed coffee into an insulated bottle and sealed it, then tasted the coffee's flavor changes every hour. (There are many types of insulated bottles. FrontStreet Coffee chose an ordinary portable 316 stainless steel insulated bottle. FrontStreet Coffee tested it and found its insulation performance lasts about 12 hours.)

Hourly Flavor Changes

After pouring into the insulated bottle, FrontStreet Coffee measured the coffee temperature at 68°C. After 1 hour, FrontStreet Coffee measured the coffee temperature again at 65.8°C, still quite warm. When poured into a cup, there were already obvious floral and citrus fruit aromas emanating. The taste was not much different from when freshly brewed, with jasmine flower, citrus, honey, and green tea notes.

Coffee tasting at 1 hour

After 2 hours, FrontStreet Coffee measured the coffee temperature again at 60°C, then poured it into a cup for tasting. The temperature at entry was just right, not hot enough to burn the mouth. The flavor was not much different from freshly brewed coffee.

After 3 hours, the coffee temperature measured 54°C. When poured into a cup for tasting, one could still taste the sweet aroma of flowers and fruits, though slightly weaker than before.

After 4 hours, the coffee temperature measured 50°C. When poured into a cup for tasting, the coffee was no longer hot at entry, but warm. The floral aroma had disappeared, while the sweet aroma of citrus and berries dominated. The acidity and tea-like taste were also more noticeable than before.

After 5 hours, the coffee temperature measured 46°C. When poured into a cup, there was still some steam, but no aroma could be detected. The口感 at tasting was already cool (the coffee liquid was cooler than the mouth temperature at entry). At this point, the honey sweetness and green tea aftertaste were very noticeable. The citrus acidity was very prominent, but flavors like floral and fruit aromas were no longer apparent.

Conclusions and Recommendations

Using an insulated bottle to hold coffee can indeed "lock in" the coffee's flavor. Basically, choosing some quality portable insulated bottles can preserve coffee flavor well for 2-3 hours, making it feasible to brew a cup of coffee before work and bring it to the office to drink. However, the insulation time of the bottle is not that long, which depends on the bottle's insulation performance, the temperature of freshly brewed coffee, and the number of times it's opened. But FrontStreet Coffee also does not recommend using an insulated bottle for too long, because coffee is not pure water after all, and over time it may still cause bacterial growth, especially after 4-5 hours when the temperature drops, creating an ideal environment for bacterial reproduction.
