Cold Brew Coffee: Why It Has Become So Popular Worldwide
In coffee shops around the world, cold brew coffee has gained immense popularity. According to market analysis firm Grand View Research, the global cold brew coffee market is expected to reach approximately $1.63 billion by 2025.
There are two main reasons why cold brew coffee has become so popular. First, its preparation method is extremely simple, whether in a coffee shop or at home. Second, the flavor profile exhibited by cold brew coffee has not only conquered many coffee connoisseurs, but many newcomers to coffee also fall in love with it immediately after tasting cold brew coffee.
The Rise of Cold Brew in the Specialty Coffee Era
In this era influenced by specialty coffee culture, people increasingly pursue the unique flavors of coffee origins when presented without any additives. Compared to high-temperature extraction, low-temperature immersion brewing better showcases the unique charm of a coffee and creates a final flavor that aligns more closely with the ideal taste that consumers expect.
"Low-Temperature Extraction Produces Cleaner, Fuller Coffee Flavors"
Compared to most other extraction methods, prolonged low-temperature extraction typically results in coffee with more sweetness and a richer, fuller body.
Last week, the Coffee Science Foundation and the Specialty Coffee Association published a research report on cold brew coffee, analyzing that low-temperature immersion extraction produces coffee with more floral and fruity aromas than high-temperature extraction, while also having less bitterness, acidity, and defect flavors.
This study identified four sensory attributes that showed statistically significant changes related to extraction temperature (these changes were consistent across all tested origins and roast levels). Among these four attributes, bitterness, acidity, and rubbery flavors were higher in hot-extracted coffee, while floral aroma was higher in cold-extracted coffee. Of course, for specific origins and roast methods, additional sensory attributes may be significantly affected by temperature.
When using the same coffee beans, same weight, and same grind, various chemical compounds in the coffee particles dissolve at different rates in hot and cold water.
During high-temperature extraction, tannic acids break down into pyrogallic acid, and various fatty acids dissolve faster and more thoroughly in hot water, bringing bitterness and acidity. However, in low-temperature extraction, as time extends, the types of acidic compounds gradually decrease, so cold brew coffee has much reduced acidic and bitter flavors. At the same time, it reduces the volatilization of coffee aromas, better locking the fragrance within the coffee.
Modern Consumer Preferences
Today's coffee bean flavors are becoming cleaner and brighter, but also more acidic, creating a significant contrast to the rich, full-bodied flavors of traditional coffee. However, for the general consumer population, not everyone can accept the acidity of coffee, nor do they necessarily enjoy traditional rich, full-bodied flavors.
Therefore, cold brew coffee's softer acidity, reduced bitterness, and ability to express the unique floral and fruity characteristics of coffee has gained greater appreciation and recognition among modern consumers.
"Cold Brew Coffee Has Strong Versatility"
In addition to its convenient preparation and cleaner, fuller flavor profile, another reason for cold brew coffee's popularity is its greater versatility compared to espresso.
Because it's not high-temperature extracted and allows for adjustable extraction concentration, cold brew coffee can achieve high concentration without producing uncomfortable flavors like burnt bitterness, making it suitable for various coffee specialty drinks.
In this era where everyone enjoys DIY and can make various types of coffee at home, cold brew coffee—with its convenient preparation and full, clean flavors—has undoubtedly become a focus for online enthusiasts. The various innovations and creative ideas on the internet have also drawn more attention to cold brew coffee from the community.
"Cold Brew Coffee Contains Higher Caffeine Content"
For those who struggle to wake up in the morning but stay awake late at night, cold brew coffee's energizing effect is stronger than espresso or pour-over coffee. (Of course, caffeine content in coffee is highly variable, with factors including coffee bean variety, grind degree, brewing time, and coffee blend ratios all having significant impacts, with a wide range of variation).
Many people believe that higher coffee concentration means more caffeine, or that coffee extracted with hot water contains more caffeine. In fact, extraction time is the most influential factor on caffeine content in coffee.
Caffeine is released more as extraction time extends. Since cold brew coffee typically requires 8-12 hours to prepare, cold brew made from the same coffee beans will have a stronger energizing effect than coffee made with other extraction methods.
