Guarumo Farm: The Hartmann Family's Newest Gem

Guarumo Coffee Farm, also known as Guarumo Coffee Farm, is located north of the Hartmann Estate in the Santa Clara region of Chiriqui Province, Panama. It was purchased in 2013 by Ratibor Hartamann, the third-generation manager of the Hartmann family, and spans only four hectares~ The estate exclusively cultivates the Geisha coffee variety at an altitude above 1750m.

The Hartmann Family Legacy

The Hartmann family's story in Panama is quite a long history of European immigration. Alois Strasil Hartmann (the Hartmann family ancestor) was born in what was then the Austro-Hungarian Empire, now the Czech Republic region. Due to unstable political conditions in his home country, he decided to start a new life abroad. Initially, Alois stayed in New York, USA, before eventually making his way to Panama. However, after several months, Alois discovered that he couldn't adapt to urban life in Panama City.

Adventure DNA always ran in his blood. Shortly after quitting his job, he decided to follow the mountain line to the Volcan region to start working and settle down. During this time, he married his first wife Susana Troetsch and had Hartmann Troetsch, the founder of Hartmann Estate. Then, starting from 1940, Hartmann Troetsch inherited his father's farmland, began land preparation work, and thus created the history of Hartmann Estate that continues to this day.

The first-generation Hartmann ancestor Alois Strasil Hartmann initially cultivated coffee growing areas in Panama's Volcan region. Later, the second-generation Hartmann Troetsch moved coffee cultivation to the Santa Clara region and formally established Hartmann Estate.

During the initial cultivation, Hartmann Troetsch decided to preserve most of the original forest land within the estate. This concept of native forest protection has continued to influence the current third-generation estate manager Ratibor Hartamann. Today, Hartmann Estate still maintains this tradition, with coffee cultivation areas accounting for only about 20% of the entire estate. Due to the success of forest protection, the estate has numerous native birds, with the locally famous toucan naturally becoming the estate's standard logo.

In addition to their own estate, the Hartmann family also provides management services for nearby estates, such as Ninety Plus's estates in Panama and Finca La Mula, all managed by the Hartmann family.

BOP Success Story

Although Guarumo is the Hartmann family's new estate, this is not the first time it has won a BOP championship~ In 2020, Guarumo Farm's natural Geisha captured the hearts of a group of judges with its enchanting jasmine, rose, champagne, candy, and bergamot flavors.

Since the estate hadn't done much promotion, in that year, Guarumo Farm emerged like a dark horse that captured everyone's hearts~ This year, Guarumo Farm's natural Geisha coffee beans once again demonstrated their strength, winning the natural Geisha category championship in the 26th BOP competition.

FrontStreet Coffee's Geisha Experience

Although this batch of Guarumo Farm natural Geisha coffee beans acquired by FrontStreet Coffee is not from the competition lot, it comes from the new 2022 harvest. To preserve the enchanting tropical fruit and floral notes of this natural Geisha, FrontStreet Coffee used light roasting.

Guarumo

Through cupping comparison, this natural processed Geisha coffee bean from Guarumo Farm exhibits dry notes of mango and strawberry after grinding; after sipping, it presents mango, pineapple, white floral notes, sugary fruit candy, and malty fermentation sweetness (somewhat like beer). The overall complexity is quite rich~

Since this Guarumo natural Geisha coffee bean is grown in high-altitude areas, the coffee beans themselves have higher density, and light roasting hasn't significantly changed this density. Therefore, medium-fine grinding (78% passing through China No. 20 standard sieve) and higher water temperature can be used for extraction brewing.

v60

FrontStreet Coffee's pour-over parameter recommendations: V60/cone-shaped filter, 15g coffee grounds, 1:15 coffee-to-water ratio, fine sugar consistency/medium-fine grind (78% passing through China No. 20 standard sieve), 90-91°C water temperature.

Using a three-stage circular pouring technique: First, use 30g of water to fully moisten the coffee bed into a "hamburger" shape and let it bloom for 30s, then proceed to the second stage; Frontsteet used a steady medium-fine water stream for circular pouring to 125g then stopped; when the water level dropped to 2/3 of the coffee bed, pour the third stage; continue using medium-fine water for circular pouring to 225g and finish pouring, with a total extraction time of 2'18".

FrontStreet Coffee's Guarumo Farm natural Geisha flavor profile: The entry is mango and pineapple composite juice-like aroma and acidity, the middle section presents white floral notes and malty fermentation sweetness, with a fruit candy-like aftertaste~
