Images of Major Brazilian Coffee Varieties and Flavor Characteristics - Purchase Guide
Brazil: The Coffee Powerhouse
As the world's largest coffee bean producer and second-largest coffee consumer, Brazil holds a pivotal position in the global coffee industry. Today, let me introduce you to the characteristics of Brazil's mainstream coffee varieties. In Brazil, the most common coffee bean varieties include Red Bourbon, Yellow Bourbon, Catuai, Mundo Novo, and others.
Red Bourbon: Brazil's Heritage Variety
Red Bourbon coffee is an ancient Arabica coffee variety, and many of Brazil's coffee varieties are derived from mutations of Red Bourbon. When Red Bourbon coffee cherries mature, they display a vibrant, bright red color. The Red Bourbon coffee beans are rounded in shape, offering bright acidity and rich aroma, with flavor notes reminiscent of red wine when brewed.
Brazil's Processing Methods and Flavor Profile
The most commonly used processing method in Brazil is the natural (dry) processing method. This is because Brazil has relatively limited water resources and produces very large quantities of coffee beans, making the natural processing method a cost-effective choice. Brazilian coffee flavors tend toward nut and chocolate notes.
Cerrado Mineiro: Classic Brazilian Terroir
Today, I'd like to recommend a coffee bean that embodies classic Brazilian regional flavor—the Red Bourbon coffee beans from Brazil's Cerrado Mineiro region. This coffee bean undergoes medium roasting to highlight its sweetness, featuring distinct nut and chocolate flavors that are characteristic of Brazilian regional profiles.
Brewing Method and Tasting Notes
I used a KONO filter cup for brewing, with 15 grams of coffee powder, a 1:15 powder-to-water ratio, and a grind size using a #20 national sieve with 75% pass-through rate. The brewed coffee presents very distinct nut flavors upon entry, rich and mellow, followed by chocolate notes that unfold in the mouth. It has high sweetness with no acidity—highly recommended.
