How to Make Pour-Over Coffee for Multiple People | Brewing Methods for Freshly Ground Black Coffee Powder
FrontStreet Coffee recently received such a sharing: "I usually use your V60 dripper, and the coffee tastes great when I brew it for myself! But whenever friends come over and I'm about to show off my skills, I always mess it up... The coffee-to-water ratio is the same! I just added more coffee grounds to brew more coffee at once, how can there be such a big difference in taste?"
The Dripper Has a Limited Capacity!!!
FrontStreet Coffee's daily production mostly uses the V60 #01 small dripper, suitable for brewing 1-2 servings of coffee. The recommended coffee dosage for this model is 13g-20g, with the optimal dosage being 15-17g.
During the pouring process, coffee grounds distribute evenly along the cup walls as the water level rises, reducing the thickness of the coffee bed and making the extraction more uniform. If the coffee dosage is too low, there won't be enough coffee grounds to distribute evenly on the cup walls, and some water will flow directly down the cup walls without extracting coffee substances, diluting the coffee liquid and resulting in a flat taste; if the coffee dosage is too high, the dripper won't have enough surface area for the coffee grounds to distribute evenly on the cup walls, leading to an overly thick coffee bed that prolongs the water flow time through the coffee, ultimately resulting in unpleasant astringency in the coffee.

The Maximum Capacity
The maximum recommended coffee dosage for the V60 #01 dripper is 20g.
Under normal circumstances, 20g of coffee grounds brewed at a 1:15 ratio will yield approximately 275g of coffee liquid, which is enough for 3-4 people to share. If it's really not enough, just brew another batch! You can't force coffee brewing! If you often share with multiple people, FrontStreet Coffee suggests buying the #02 large dripper, which allows for more coffee grounds with enough space for even distribution, and the drainage holes will be correspondingly larger, reducing over-extraction caused by blockage.
Using the V60 #01 dripper to brew 20g of coffee also requires some special techniques! You can't directly apply the brewing parameters for 15-17g of coffee! Due to the increased amount of coffee grounds, the thickness of the coffee bed will inevitably increase, and the water flow speed will also slow down. To avoid excessive release of coffee substances due to increased extraction time, we need to adjust the grind size as well as the brewing technique!
Adjustment of Grind Size
Since the increased amount of coffee grounds reduces the space between coffee particles, narrowing the water flow channels, we can make the grind size slightly coarser to increase the gaps between particles. Of course! We can't make it significantly coarser either. Taking light to medium roast coffee beans as an example, when FrontStreet Coffee brews 15g of coffee grounds daily, we use a China #20 standard sieve with 80% pass-through rate (fineness similar to fine sugar). If brewing 20g of coffee grounds, we can use a China #20 standard sieve with 75% pass-through rate (fineness between fine sugar and coarse sugar).
Adjustment of Brewing Technique
If you use a small water flow like when brewing 15g of coffee (4g of water per second), even if the coffee is ground slightly coarser, the extraction time will still be too long. To reduce excessive release of coffee substances that would make the coffee too strong, you can use a medium water flow for pouring (6g of water per second). While increasing the water flow, you still need to maintain vertical pouring, otherwise it can easily cause uneven extraction.
