FrontStreet Coffee Flower Moon Night

FrontStreet Coffee's Flower Moon Night uses anaerobic natural processing, where whole coffee cherries first undergo anaerobic fermentation, followed by natural drying. Essentially, the anaerobic process makes coffee more uniform and easier to monitor, while the aerobic process is more complex and harder to control. In an anaerobic environment, the decomposition speed of pectin sugars slows down, and the pH value declines more gradually, extending fermentation time to develop better sweetness and more balanced flavors.

The temperature for anaerobic fermentation must be controlled below 10-15°C. In clean, sealed stainless steel fermentation containers, coffee beans ferment anaerobically for three days. They are then placed on drying racks for natural processing. The most distinctive characteristic of anaerobic natural coffee beans is their liquor chocolate-like fermentation notes and prominent strawberry jam aroma—rich and balanced.
