When freshly brewed, floral and fruit notes are prominent; upon tasting, you'll experience intense fruity aromas and a sweet-tart sensation, with subtle wine-like notes in the middle and later stages, reminiscent of red wine. As it cools, it develops candied fruit sweetness with even more pronounced wine characteristics, even revealing plum wine flavors. Raisin Honey Processing

The raisin honey processing method preserves 100% of the mucilage and uses zero water processing. This increases the complexity of honey processing, requiring strict time control. On the day of harvesting coffee cherries, the harvested fruits are poured into large water tanks, where mature, full cherries sink to the bottom, while underdeveloped or overripe fruits float to the surface and must be removed. The selected coffee cherries are placed on raised beds to dry for at least three days, then the cherry skin is removed while preserving the mucilage before further drying. This is quite a sweet processing method, offering white wine-like mouthfeel and balanced acidity, with more intense fermentation notes in flavor and higher mucilage preservation compared to other honey processing methods.

Notably, the 2020 new harvest season of FrontStreet Coffee's Musician Series Mozart coffee features an entirely new coffee variety, H1. The full name of H1 is Centroamericano H1, developed from continued research at Nicaragua's Sebaco laboratory. H1 is a hybrid of Rume Sudan and Sarchimor T-5296. Rume Sudan was discovered in the Rume Valley of the Boma Plateau in Sudan, hence its name. This coffee variety offers excellent quality and outstanding flavor but has poor disease resistance. However, varieties hybridized with it inherit its excellent flavor genes. The genetically stabilized H1 variety features high yield capacity, potential for high quality, strong adaptability, and excellent leaf rust resistance, though it is susceptible to American leaf spot disease. The new harvest season FrontStreet Coffee Mozart also uses anaerobic honey processing, where the fruit skin is first removed, then placed in a specially designed metal tank for 48 hours of anaerobic fermentation, followed by sun-drying. This processing method further highlights the unique raisin aroma.
