Hacienda La Esmeralda, the producer of Geisha coffee, is undoubtedly one of the top-tier estates in the specialty coffee industry, renowned throughout the coffee world. FrontStreet Coffee believes that whether as the discoverer or promoter of Geisha flavor, or for its repeated record-breaking auction achievements, these factors have contributed to La Esmeralda's current magnificent status.

How did La Esmeralda elevate Geisha to prominence?

Initially, the Geisha variety was introduced to Panama as an improvement variety. Due to low yield and mediocre flavor performance at lower altitudes, it was not popular among farmers. In the 1960s, Rudolph A. Peterson, planning for his retirement, purchased La Esmeralda in Boquete primarily for dairy production. In 1973, Peterson's son returned to Boquete to assist his father in managing the farm, began to focus on coffee production, expanded the plantation area within the estate, and introduced more new varieties, including Geisha.

In the 1990s, many coffee trees in the farm suffered from leaf rust disease, but Daniel Peterson noticed that Geisha trees were not severely damaged. Therefore, they decided to transplant Geisha, originally mixed with other varieties, to more areas of the farm while increasing its planting altitude. In 2003, the Peterson family finally discovered Geisha's potential. During the first cupping, it displayed intense white flower aroma, berries, citrus, and bergamot-like aftertaste, with an extremely clean taste, thus forming the very typical Panama Geisha flavor. Amazed by this discovery, they decided to enter it in the 2004 BOP (Best of Panama) competition, where it won championship titles for multiple consecutive years.

In 2005, La Esmeralda's Geisha participated in the SCAA (Specialty Coffee Association of America) competition, defeating many star contenders and earning the honor of world-class specialty coffee. It swept the world championships in 2006 and 2007, thus once again attracting the attention of coffee professionals worldwide. Since then, many regions in Central and South America began competing to introduce and cultivate Geisha varieties, including Colombia, Guatemala, Bolivia... In recent years, small quantities of Geisha beans have also appeared in Yunnan, China.

Although many regions now grow Geisha, each producing area has unique terroir, and different terroirs create distinct coffee flavors. Similarly, Geisha also displays its own flavor characteristics in each region. FrontStreet Coffee believes that Geisha's explosive popularity is inseparable from Boquete's exceptional environment.

Panama has only three main coffee-producing regions: Boquete, Volcán, and Renacimiento, yet they produce some of the world's most expensive coffee. The Boquete region is one of the towns in Chiriquí Province, located on a plateau at approximately 1,000-2,000 meters elevation on the eastern side of Barú Volcano. It faces the warm, moist monsoon from the Caribbean Sea, with cold Atlantic currents behind it. The mountains are high and steep. The "Barú Volcano National Park" is an ecological conservation area with rich biodiversity, featuring seven microclimates. Coupled with year-round mist coverage and abundant rainfall, this creates excellent local growing conditions. FrontStreet Coffee's Panama La Esmeralda and Elida Estate Geisha coffees both come from the Boquete region.

Geisha is very particular about its growing environment, requiring high altitude, fertile soil, cloud cover or plant shade, and cannot be directly exposed to intense sunlight. The owner of La Esmeralda has mentioned that the estate needs numerous shade trees to protect the delicate Geisha from direct sunlight, and traditional pruning methods must be used during the initial planting period, otherwise the plants are prone to death. Geisha planted at higher altitudes has longer fruit maturation time, resulting in more complex and unique flavor profiles.

After Geisha won championship titles, the Peterson siblings implemented more systematic management of the Geisha coffee trees in the estate based on altitude, region, and cupping performance. The Geisha growing areas were divided into three main plots: Cañas Verdes, Jaramillo, and El Velo.

To ensure traceability of each coffee batch, Peterson divided each major plot into smaller sub-plots, allowing buyers of Geisha coffee to access specific growing plot information through batch records. Among these, the most famous sub-estate—Jaramillo—is named after the Jaramillo mountain range east of Boquete. It has an annual rainfall of 4000ml, with average daytime temperatures between 19-25°C and nighttime temperatures between 11-15°C. The entire region's air is humid and cold. Jaramillo is further subdivided into 6 red label plots: Mario, Noria, Reina, Bosque, Buenos Aires, and Caballeriza, which was added last year.

Compared to the Red Label, the Green Label is La Esmeralda's second-tier Geisha, making it more affordable. According to FrontStreet Coffee's research on La Esmeralda's official website, the original name of Green Label was "Private Collection." As non-auction but high-quality Geisha batches, Green Label is harvested from mixed Geisha beans from different plots in the three main estates at altitudes between 1600-1800 meters, including Jaramillo, Cañas Verdes, and El Velo. With its classic citrus-honey aftertaste, it has become the preferred choice for many Geisha enthusiasts.

FrontStreet Coffee's Esmeralda Red Label is a natural process batch, hoping that everyone can more clearly experience the floral and fruity notes from specific micro-lots. Geisha coffee is world-famous for its rich floral aromas and complex fruit profiles. FrontStreet Coffee's roasters hope to preserve more of Geisha's quality acidity, so they choose light to medium roast (with slight adjustments for different batches). This roast level doesn't significantly change the high density of high-altitude beans, so brewing requires a higher extraction rate to present fuller flavor layers. Here, we use higher water temperature and slightly finer grind size to extract more aromatic compounds. Additionally, FrontStreet Coffee wants Geisha coffee's flavor to be clearer, so we increase the powder-to-water ratio to 1:16.

To increase Geisha coffee's extraction rate while avoiding over-extraction while highlighting sweet and sour flavor layers, FrontStreet Coffee's baristas use the V60 dripper. The V60 dripper features flow ribs connecting the top and bottom and a large central hole that accelerates water flow, while the spiral-shaped air groove design extends the water flow path, increasing contact time between coffee grounds and hot water. Each water flow converges along the grooves toward the filter's center point, concentrating pressure on the coffee grounds and resulting in richer extracted coffee layers.

Hand brew parameters for Red Label Geisha: Dripper: V60, Water temperature: 91-92°C, Coffee amount: 15g, Powder-to-water ratio: 1:16, Grind size: Fine sugar (80% passes through #20 sieve)

Three-stage extraction: First, pour 15g of coffee powder into the dripper and zero the scale. For the first stage, inject 30g of water for a 30-second bloom, starting the timer simultaneously. Use a small water flow starting from the center and moving outward in circles, ensuring the entire coffee bed is moistened.

For the second stage, use a slightly larger water flow to inject 120g of water, aiming to raise the entire coffee bed. The water stream needs to be injected vertically and evenly. At this point, the timer scale shows 150g, and injection should be completed in about 55 seconds.

When the liquid level drops to halfway, begin using a small water flow in small circles to inject the third stage of 90g. Try to control the water flow to not be too large, as this can easily scatter the coffee grounds and cause under-extraction. Finally, the total injection amount is 240g, with completion time around 2 minutes and 10 seconds. After removing the dripper, shake the coffee liquid in the sharing pot evenly before tasting.

Hand-brewed Esmeralda Red Label Geisha offers fresh jasmine, citrus, and tropical fruit acidity, with flavor layers that change as the temperature varies. The overall mouthfeel is smooth, with a pleasant tea-like aftertaste.
