Guatemala is located in the Central American isthmus, with many volcanic-formed mountain and plateau terrains within its borders. It produces high-quality Central American high-altitude strictly hard beans and is the world's ninth-largest coffee bean-producing country. Guatemala's main coffee producing regions include seven major areas: Antigua, Huehuetenango, Atitlan, Coban, Fraijanes, San Marcos, and Acatenango. All coffee beans produced in these seven major regions are Arabica varieties.
The Antigua producing region is located in the central highlands of Guatemala. This area has a subtropical monsoon climate with abundant rainfall and fertile volcanic ash soil. The coffee produced here has bright acidity and fruit aroma, making Antigua Guatemala's famous coffee producing region.
La Minita is a trading company that established its own coffee brand "La Flor del Cafe" in Guatemala, meaning "Coffee Flower" in Chinese, translated as "Flower Goddess." La Minita Company has an excellent reputation for green bean processing and quality control, providing the industry's highest standards of cultivation and processing technology, directly dispatching specialists to Guatemala to participate in quality control.
La Minita Flower Goddess is a star product from their lineup, processed and produced by the renowned local Guatemalan processing plant Pastores Mill. Under the strict supervision of La Minita, from purchasing green beans to washing and sun-drying processes, all procedures follow La Minita's strict control protocols. They strictly supervise the entire process of Flower Goddess coffee from cultivation to packaging. These meticulous procedures are all to ensure that the coffee beans provided by Pastores Mill are of the highest quality.
Processing Method
This batch of Flower Goddess purchased by FrontStreet Coffee is washed processed. First, the harvested coffee cherries are poured into large water tanks. Underdeveloped inferior beans will float to the surface, while mature, full fruits will sink to the bottom. At this time, the defective beans (fruits) floating on the surface are removed. Then, a pulping machine is used to remove the outer skin and pulp of the coffee fruit. At this point, the coffee beans are still attached with a layer of slippery mucilage.
The coffee beans with mucilage are then placed in fermentation tanks for 16-36 hours. During this process, microorganisms decompose the mucilage. After fermentation is complete, large amounts of clean water are used to wash away the mucilage residue from the coffee beans.
Antigua's summers have little rainfall, and winters occasionally experience frost due to excessive cold, which actually isn't suitable for coffee tree growth. Fortunately, it's located in an active volcanic zone. After volcanic eruptions, volcanic pumice falls into the soil and cools. Because these pumice stones have many fine pores, they are very effective at retaining moisture. Additionally, large numbers of shade trees are planted within the estates, preventing coffee trees from suffering cold damage in winter.
These factors that overcome adverse conditions, combined with significant day-night temperature differences, have created Antigua's unique microclimate, giving the coffee beans here a subtle smoky flavor and rich fruit aroma.
