The World's Most Expensive Civet Coffee Beans: How to Brew a Perfect Cup of Kopi Luwak Coffee

To manually drip or pour over perfect Luwak coffee, water flows through the coffee grounds, allowing the coffee to drip down and extract oils from the grounds as they pass through.

Steps:

Boiling Water

Bring the kettle to a boil over high heat. Use filtered water if available. Alternatively, use mineral water. Water heated to approximately 96°C (a few degrees above or below) is considered the standard benchmark. Water that isn't heated sufficiently results in lower efficiency, while heating it higher will extract bitter flavors.

If your beans need grinding, now is the time to do so to ensure maximum freshness. Weigh the whole beans and grind them to a medium-fine consistency. Don't grind too finely. For pour-over coffee, it's best to grind the coffee beans to a consistency similar to kosher salt.

Remove the boiling water from heat and let it sit for a few seconds (40-60 seconds) or until the water stops bubbling.

Filter Paper

Before starting, pre-set the paper filter by folding it in half, then placing it in the filter cone. Position the double-folded side on the funnel.

Rinse the filter with a small amount of water to preheat the apparatus, then discard this water to remove any paper taste from the filter.

Add the coffee grounds to the filter. Gently shake to level/settle the grounds, but never pack them down. Allow approximately 15-20 grams of ground coffee beans for a coffee-to-water ratio of 1:15.

Pouring Water

Pour the water slowly over the coffee grounds, starting from the center and moving the water stream in circular motions outward.

Stop when the ground coffee is saturated with water but no coffee is dripping yet. For better flavor extraction, use just enough water to cover the grounds. Stir once or twice and wait for 15 seconds.

Pour water in a slow, even spiral motion, adding water every 10-15 seconds for even extraction.

Repeat until all the Kopi Luwak coffee is brewed. After finishing pouring, wait for approximately three minutes.

Remove and discard the filter paper, and enjoy a perfect cup of Kopi Luwak.
