According to SCA recommendations, we suggest using 15g of coffee grounds with 90-91°C hot water to make 225ml of coffee, with a water-to-coffee ratio of 1:15.

The renowned specialty coffee bean Hakui comes from the Guji region of Ethiopia. Originally, the Guji region was part of the Sidamo region, but due to its outstanding flavor profile, it became an independent coffee-producing region. However, many people still classify Hakui coffee beans as belonging to the Sidamo region. FrontStreet Coffee has tried coffee beans from multiple coffee-producing regions in Ethiopia, including Yirgacheffe, which stands alongside Sidamo as one of Ethiopia's two major specialty coffee regions. FrontStreet Coffee compared coffee beans from Yirgacheffe and Sidamo, and could clearly distinguish their respective flavor characteristics. While both are Ethiopian beans with the basic characteristic of bright fruit acidity, Yirgacheffe coffee beans tend toward citrus and lemon notes with hints of jasmine fragrance, while Sidamo coffee beans feature strawberry jam and passion fruit acidity with a creamy mouthfeel.

Guji Region

The Guji region, formerly part of the Sidamo region, was established as an independent new region by the Ethiopia Commodity Exchange (ECX) in 2010.

The most famous coffee bean from the Guji region is undoubtedly the Hakui coffee bean, which won the 2017 TOH (Ethiopia National Taste of Harvest Competition) with its outstanding strawberry cream flavor, making it a worthy champion.

Hakui Coffee Bean

The naming convention for Hakui X.0 is based on the year, so when you see Hakui 3.0, you know it's coffee beans from the 2019 harvest season, and when you see Hakui 4.0, you know it's from the 2020 harvest season. Besides this yearly pattern, the 2017 Hakui coffee was only natural-processed coffee beans handled by the "Buku Abel" processing station, while DW company gradually expanded its processing stations and increased production. Its flavor also shows distinct differences from the 2017 Hakui flavor. Strictly speaking, only natural-processed coffee beans from the "Buku Abel" processing station can be called Hakui coffee beans.

The flavor and aroma of Small Bean Hakui are very similar to the 2017 Hakui. Initially, FrontStreet Coffee found flavors similar to the 2017 Hakui in the 2018 and 2019 vintages, but the body and aftertaste were not as good as the 2017 Hakui. FrontStreet Coffee discovered that the main source of the 2017 Hakui's aroma was some particularly small bean varieties among the Hakui coffee beans, and similar small coffee beans were also found in the 2018 and 2019 Hakui vintages. Starting from 2020, the processing station began to separately process the Small Bean Hakui again. Therefore, Small Bean Hakui does not belong to the [X.0] series. From 2020 onwards, DW company separately processed the small bean varieties, creating Small Bean Hakui coffee beans.
