Kenyan Premium Coffee: How to Roast Kenyan Coffee and Brewing Parameter Recommendations
Kenya AA is often considered one of the world's brightest specialty coffee beans, though this is debated among coffee cuppers and daily specialty coffee enthusiasts. However, it is certain that Kenya AA is one of the best known coffee beans and one of the most favored among coffee connoisseurs. The largest and best coffee bean grade from Kenya is Kenya AA and Peaberry. Kenya AB is also frequently rated high and provides an acceptable alternative when AA is unavailable.
Kenya AA grows at altitudes above 6,600 feet and is considered one of the world's finest coffee beans. High altitude means the beans grow slower than in lower altitude regions, providing more nutrients and allowing them more time to develop their flavors and mature.
Coffee beans produced in Kenya have a full body and rich, strong flavors with very pleasant acidity. The fragrant aroma also has floral notes, with wine-like aftertaste and hints of citrus and berries.
Grading
The largest screen size in the Kenya coffee grading system is E (Elephant), followed by PB (Peaberry) and AA, which means the raw coffee bean diameter is only slightly larger than a quarter inch (¼"). While AA is the most common on the market, others can sometimes be found, but won't significantly affect the flavor.
Kenya AA specifications: Screen 21; 18 days retention; 7.2mm diameter.
The altitude of Kenya coffee farms makes them Strictly High Grown (SHG) / Strictly Hard Bean (SHB) - the best.
Roast Level
The best Kenya AA coffee is typically medium roasted, allowing the coffee's natural brightness to shine. Roasting it darker results in losing the nuances that make this bean so exceptional, though this can be done for those who prefer coffee with more "coffee-like" flavor.
As with any single-origin Arabica coffee, freshly roasted coffee performs better than aged coffee that may have been sitting in distribution warehouses and on shelves for months. When purchasing brands from large retailers like Amazon and Starbucks, it's important to ensure the coffee is labeled as freshly roasted and clearly explains what this means—some companies label "freshly roasted when packaged" when the coffee was packaged months ago.
