This specialty coffee is harvested near Hambella city in the Guji region of Ethiopia. The region sits at an altitude of over 2,000 meters. Few plantations are located at such elevations, which is precisely why this naturally processed coffee exhibits rich fruity flavors and a sugarcane-like aftertaste. FrontStreet Coffee's Guji selection comes from the Shanquan Processing Plant, with producers being small farmers located near the washing station, and the variety is native.
Coffee Growing Advantages in the Hambella Region
Hambella city is located at an altitude of 2,320 meters, at a particularly high position. Until a few years ago, it was too cold for coffee cultivation. New plantations producing young, healthy, slow-growing trees yield excellent quality coffee. The 315 hectares are scattered throughout the region, much larger than typical Ethiopian plantations. This gives farmers more reasons to seek financing, aiming for training and investment to continuously improve their crop quality, providing more negotiating leverage, and making operations more convenient.
Production Management at the Goro Washing Station
Goro is one of seven washing stations owned by coffee exporter Buno General Trading, managed by Abiyot. To obtain the highest quality specialty coffee possible, he selects producers from the best plots that favor large plantations (8 to 15 hectares), as it's easier to improve harvesting methods and coffee quality in these plantations. Additionally, in the medium to long term, this policy allows for creating micro-lots for each individual plantation, further enhancing the coffee's traceability and story.
This washing station processes coffee exclusively using the natural method, with Abiyot experimenting with different drying techniques to achieve optimal results for each batch.
Meticulous Coffee Processing Techniques
Due to the cool climate conditions, cherries mature slowly, allowing complete development of sugars in the fruit. When ripe, the cherries are hand-picked using selective harvesting and brought to the washing station, where they are cleaned and selected using floating techniques. They are then placed on raised beds where they dry slowly for up to 40 days. Even for drying, this time is exceptionally long compared to Ethiopian standards because the climate conditions at this altitude are colder, requiring more drying days. This process is continuously monitored, with special attention given to protecting the beans with sheets during the hours of maximum sun exposure. At these altitudes, sunlight is particularly intense and can damage the fruit.
