Anaerobic fermentation has been a particularly popular post-harvest processing method for coffee beans in recent years. Coffee cherries are placed in sealed containers or in washing tanks with water for fermentation. During the process, different microorganisms are used for fermentation to create special flavors. After the fermentation process is complete, these coffee cherries are dried in the sun.

The double anaerobic washed process involves first subjecting whole coffee cherries to anaerobic fermentation, then removing the skin and pulp, followed by a second anaerobic fermentation with the sticky mucilage layer intact. After fermentation is complete, the beans are washed to thoroughly clean the mucilage layer before sun-drying.

Coffee Amount: 15 grams
Coffee-to-Water Ratio: 1:15
Grind Size: 80% pass-through rate through China standard #20 sieve

First, pour 30 grams of hot water and let it bloom for 30 seconds. Then, pour slowly in a circular motion from the center to 125 grams. When the water level in the dripper drops to just above the coffee bed, continue pouring in a circular motion to 225 grams. The total extraction time is approximately 2 minutes.
