Mocha Coffee Origin Story and Characteristics of Organic Mocha Beans
Everyone has probably tried Mocha coffee, the kind of coffee drink that is served in coffee shops with chocolate sauce added. But did you know that Mocha is also the name of a coffee bean variety?
Yemen Mocha coffee, traditionally grown without chemical substances (can be called organic), is a wild, dry-processed (natural) coffee that typically has a full body with rich wine-like acidity. The dry processing and quite wild coffee results in a full body with wine-like acidity and deep earthy tones. Musky fruit notes give way to wonderful chocolate flavors. This is a lively coffee with spicy notes of cardamom and cinnamon, as well as dried fruits like raisins and pleasant sweet spices.
This flavor is often described as complex, very rustic and deep, with distinct spicy notes. Yemen Mocha may also exhibit musky fruit flavors and chocolate aftertaste. Dark roasting brings out fruity flavors and rich chocolate notes. This degree of roast is very similar to Mandheling coffee and Blue Mountain coffee. Mocha coffee is commonly sold as Mattari (known for its heavier body and chocolate flavors) or Sanani (known for its fruity notes and good balance). Indonesian Java Arabica coffee beans are sometimes blended with Yemen Mocha to create the world's oldest and most traditional coffee blend—the famous Java Mocha coffee beans.

This is somewhat similar to Geisha coffee flavors. Yemen Mocha's pleasant wildness features layers of dry cinnamon, cardamom, and dried fruits (such as raisins), occasionally with notes of tobacco, wood, roasted nuts, or sweet spices. When Mocha coffee beans are dark roasted, rich chocolate tones as well as fruit and wine flavors become prominent, which enhances the coffee's taste and aroma as well as its richness.
Yemen Mocha Coffee Cultivation
Mocha coffee grows in the mountainous regions at the southern tip of the Arabian Peninsula near the Red Sea in Yemen—the coffee is named after that ancient port.
Some of the finest Yemen Mocha coffee grows in northern Yemen, just as it was grown a thousand years ago on irrigated terraces in the semi-arid mountainous regions of the area, under the desert sun.
Mocha coffee is labeled as Mattari (with chocolate flavors and heavier body) or Sanani (more balanced with fruity characteristics).
Mocha Sanani coffee is known for its complexity and exotic spiciness, while Mattari coffee (sometimes blended with Yemen Mocha coffee) is known for its wine-like acidity.
