Ethiopian Heirloom Varieties
Although Ethiopia has over 10,000 unique varieties, large-scale cultivation of any single variety can be challenging. Each variety has its unique requirements and is typically suited to specific regions within the country. Heirloom varieties actually refer to indigenous Arabica coffee beans from the origin that have survived for a very long time and can still be found in the wild today. However, due to being spread across various coffee farms, they are generally divided into two types: JARC varieties and regional varieties.
"For example, Badessa, Khudumi, Miqe, Sawa, and Wolichu varieties are all indigenous to the Guji region."
The growing recognition of heirloom varieties also supports Ethiopian producers. Generally, Ethiopian heirlooms tend to have floral and fruity cup profiles, but specific characteristics indeed vary by region.
Typically in Guji, coffee tends to be intensely fruity with notes of berries and jam, while in Sidamo, coffee is more floral with pronounced apricot flavors.
The importance of sourcing single varieties and advises roasters to be careful when blending heirloom coffees. "I've found that because Ethiopian heirlooms are so distinctive, blending rather than separating varieties can truly change the cup profile."
