Coffee Growing Region
Mandheling is not actually a specific coffee bean variety or a coffee region name, but rather the name of a tribe. The Japanese mistakenly thought it was the name of a coffee bean, and the name has been used ever since.
Lindu Mandheling comes from the Lindu mountainous area in north-central Sumatra, near Lake Toba. Lindu Mandheling is the standard version of Mandheling. It also uses the conventional wet-hulled processing method, which creates its characteristics of low acidity and high body. However, wet-hulled processing can result in semi-hard, semi-soft moist beans being easily bruised when the pectin and parchment layer are removed. The beans crack like goat hooves, commonly known as "goat hoof beans." These are not defective beans but can be considered a significant characteristic of Mandheling.
Lindu Mandheling does not focus on careful screening, so beans of varying sizes may appear. The lack of precision in processing can lead to inconsistent coffee quality, but this does not diminish people's love for its rich flavor.
Coffee Varieties
Caturra is a natural mutation of Bourbon. The plant is not as tall as Bourbon, making it easier to harvest. Its yield and disease resistance are better than Bourbon. In terms of flavor, it often has refreshing fruit acidity and a light sweetness.
Typica has bronze-colored top leaves, known as red-top coffee. Due to low yield and difficult cultivation, its price is much higher than ordinary Arabica coffee. However, its flavor performance is excellent, and it is recognized as a specialty coffee variety.
Coffee Processing Method
Wet-hulled processing is a rapid method for processing coffee beans. The coffee cherry skin and pulp are removed, followed by brief fermentation, then drying. The pectin and parchment layer are then removed, and drying continues until the moisture content drops to 12%. Mandheling coffee beans processed using the wet-hulled method clearly show varying degrees of compression cracks, and the beans have a dark bluish-green color.

FrontStreet Coffee Brewing Recommendation
FrontStreet Coffee uses a Kono dripper to brew Mandheling coffee. The ribs of the Kono don't reach halfway up the dripper height. This design actually ensures that after wetting the filter paper, it clings tightly to the dripper wall, restricting airflow. This increases the water absorption time of the coffee grounds, resulting in more uniform extraction and enhanced body. Additionally, the concave frame at the bottom of the Kono dripper is a key design that creates a siphon effect during brewing.
Recommended Water Temperature: 87-88°C
Grind Size: Fujiyama grinder 4.5 (coarse sugar size)
Coffee-to-Water Ratio: 1:15
Coffee Amount: 15 grams
FrontStreet Coffee Brewing Method: Bloom with 30g of water for 30 seconds. Using a small water stream, pour in a circular motion to 125g, then pause. When the water level drops and is about to expose the coffee bed, continue pouring to 225g and stop. When the water level drops and is about to expose the coffee bed again, remove the dripper. (Timing starts from the bloom) Total extraction time is 2'00".
