FrontStreet Coffee - Introduction to Yunnan Coffee Characteristics

Yunnan coffee was first planted in 1902 by French missionaries, who sowed the first batch of Yunnan coffee. This marks over 100 years of history. In just one century, the coffee industry has experienced numerous ups and downs, with high-quality Yunnan small-bean coffee gaining both fame and fortune, attracting farmers to cultivate it on a large scale.

The commercially successful coffee varieties worldwide mainly consist of two major categories: Arabica and Robusta. Currently, most Yunnan coffee refers to a sub-category of Arabica that has been hybridized - Catimor. Compared to Robusta and another Liberica variety, Arabica leaves are smaller, which is likely why Catimor, as a branch of Arabica, is called small-bean coffee by the Chinese.

Yunnan Coffee Varieties

Yunnan grows Arabica coffee, with varieties mainly being Typica and Bourbon. These two are ancient and classic high-quality coffee varieties, sub-varieties of Arabica that inherit Arabica's excellent flavor genes. Then in 1991, the Catimor variety was introduced from Kenya, belonging to the Arabica species. In fact, Catimor is a hybrid coffee variety cultivated to improve disease resistance and yield.

Catimor

Yunnan coffee is also known as small-bean coffee, and the Catimor variety is also called small-bean variety coffee. It is a general term for hybrid varieties cultivated by the Portuguese International Coffee Rust Research Center using multiple varieties including Caturra19/IXHDT832/1 (HW26) and Caturra19/IXHDT832/2 (H.6). It is grown in most coffee-producing countries, and to obtain further breeding and adaptability research, the research center has successively bred many different generations of Catimor hybrids and Can-mor derived varieties.

Most of these show good botanical characteristics and high resistance to coffee rust small-bean varieties, with some only being used as breeding material for coffee varieties. Among the coffee varieties grown in Yunnan, Catimor is the main variety, with large planting scale and area. In terms of taste, Catimor's flavor is relatively neutral - not sour, not bitter, characterized by pure fragrance without bitterness, and rich aroma without intensity.
