Ethiopian coffees range from rich, sweet, and fruity to light, citrusy, and floral, depending on their processing method. When you hear people raving about coffee from the famous Yirgacheffe region, they're primarily referring to washed or wet-processed coffees. This is a delicate, floral, and tea-like coffee with subtle citrus notes and a clean, light body.

The distinction between natural and washed processing in Ethiopia has a long history. Known as the famous "birthplace of coffee," Ethiopia has coffee plants growing throughout its lush green highlands. Its thousands of native coffee varieties have been cultivated and enjoyed for hundreds of years—long before wet processing mills emerged. Natural processing, where freshly picked coffee cherries are spread out to dry in the sun, has been the traditional method of processing coffee and remains by far the most common processing method to this day.
