Mandheling coffee is very famous, but Mandheling is not actually a coffee variety, but rather a general term or code name. The history of Mandheling coffee dates back quite far. In the 17th century, the Dutch introduced Arabica coffee seedlings to Indonesia for cultivation. In 1877, a large-scale disaster struck the Indonesian islands when coffee rust disease destroyed nearly all coffee trees. People had to abandon the Arabica they had cultivated for years and introduced Robusta coffee trees from Africa, which had stronger disease resistance.

On February 14, 1942, the Japanese army attacked Sumatra, and the Dutch surrendered a month later. On March 15, the Japanese army occupied Indonesia. However, Indonesia had been successively colonized by the British and Dutch, so the Indonesian people did not have any strong reaction to the arrival of the Japanese army. One day, a Japanese soldier was drinking coffee at a café in Sumatra and found the taste excellent. He asked the owner what kind of coffee it was. The owner mistakenly thought the soldier was asking about his ethnicity and replied, "Mandailing people." Thus, "Mandheling coffee" was born.

Mandheling can be said to embody a masculine quality. Drinking it gives one a feeling of unbridled satisfaction, like roaming freely through the world. This rich and mellow flavor captivates men while also symbolizing a spirit of perseverance and decisive greatness. Some say that Mandheling is heavy and intense, the Caesar of coffees, whose iron hooves crush ancient desolation and traverse the distant horizons of yellow sands; others say that Mandheling is gentle and approachable.

Mandheling has always expressed its most unique sweetness through its most distinctive bitterness, much like the bittersweet nature of life. No amount of sugar can completely mask that bitterness. At first taste, it might make you gasp, but the captivating aroma it emits makes us unable to control our obsessive fascination with it. Its bitterness is like the thorns beside a flower, making one self-aware, while its fragrance is refreshing. Mandheling's bitterness won't make you restless; instead, it makes you feel more clear-headed. Before you encounter true suffering, Mandheling is just an ordinary bitter-tasting beverage, merely a liquid that refreshes you, a tool to temporarily pause your steps; when you truly face pain, she will smile and tell you: "Because love is refined from bitterness." Letting you calm down and savor it carefully.

Using different brewing equipment with appropriate extraction parameters and techniques will result in different flavor profiles. Mandheling coffee is medium-dark roasted. Using a 1:14 water-to-coffee ratio, water temperature controlled at 88-89°C, and a grind size similar to coarse sugar, with immersion extraction for about 2.5 minutes, can enhance richness and texture; if extraction time is too long, water temperature too high, or grind too fine, it will extract uncomfortable bitterness.
