Coffee Brewing Methods

There are three methods for making black coffee, thus three different types of coffee equipment: traditional drip brewing, siphon brewing, and electric brewing. Traditional drip brewing is the most primitive method with the simplest tools. A drip coffee maker consists of a funnel, a filter paper, and a container below. However, this method demands high skill from the barista. When executed properly, it can produce exceptionally pure, premium coffee. This type of pot is very inexpensive, costing only a dozen yuan or so. Drip coffee makers are suitable for coffee enthusiasts with stable hands and sensitive palates. When selecting drip coffee equipment, it's important to note whether it has three holes or one hole.

Drip and Siphon Coffee Brewing

Three-hole drip brewers have faster dripping speeds, shorter extraction times, and produce lighter coffee, while the opposite is true for single-hole brewers. Siphon brewing utilizes the siphon principle: under the heat of an alcohol flame, when the water temperature in the lower container reaches 92°C, the water is drawn up to the upper container containing coffee powder. After soaking and stirring, the brewed coffee returns through the same path. Due to the additional stirring step, this method produces stronger-tasting black coffee, but since it doesn't rely heavily on manual technique, the process is relatively simple. These coffee pots typically cost one to two hundred yuan on the market.

Step-by-Step Pour-Over Coffee Process

Step 1: Preparation

Prepare hot water and weigh 18g of coffee beans (using a 1:15 water-to-coffee ratio as an example). Fold the filter paper and place it in the dripper. Rinse the filter paper and dripper with hot water: this removes any paper taste and helps the filter paper better conform to the dripper (key technique #1).

Step 2: Warming Equipment

Warm both the filter cup and server simultaneously. This prevents the coffee from cooling during the filtration process, as temperature affects coffee flavor.

Step 3: Grinding

Grind the coffee beans (to a consistency similar to coarse sugar). Pour the ground coffee into the filter cup and gently tap to level the coffee grounds evenly, which facilitates uniform extraction.

Step 4: Blooming

Slowly pour 85-90°C hot water (temperature adjusted according to coffee roast level and grind size) from the center of the coffee grounds, avoiding pouring onto the filter paper (key technique #2, which requires training to perfectly control water flow size and speed). Once the coffee grounds are sufficiently moistened and coffee begins dripping into the server, stop pouring and allow the coffee to bloom for 30-45 seconds (key technique #3). The purpose of blooming is to release gases from the coffee (primarily carbon dioxide). After degassing, the coffee particles can absorb water evenly for uniform extraction. You will see the coffee grounds expand during this process.

Step 5: Pouring

After blooming, begin pouring hot water in circular motions starting from the center (this can be done in one or multiple pours). The water flow should not be too strong or too fast and must remain continuous. Mastering water control also requires professional training.

Step 6: Completion

Stop pouring when reaching 270ml of water, then warm the cup and enjoy the coffee.
