Explosive juiciness is no longer an exclusive characteristic of African beans. Some excellent coffee farms or cooperatives with small production areas and limited cultivation are continuously refining their research on the cultivation and processing of special specialty coffee varieties. This has allowed Colombian coffee to develop a more distinct personality while maintaining delicate texture, rounded acidity, and sweet aftertaste. Some specially processed rare varieties will leave you even more unforgettable.
Pink Bourbon from Huila Region
The Pink Bourbon from the Huila region is first and foremost a bean that tastes "un-Colombian." Why say that? Because its drinking sensation somewhat resembles Kenyan coffee, with bright red fruit acidity.
Pink Bourbon is a hybrid of Red Bourbon and Yellow Bourbon. The success rate of hybridization is relatively low, making Pink Bourbon quite rare. It has strong disease resistance. While Yellow and Red Bourbon coffees have relatively stable reproduction, the new variety Pink Bourbon resulting from their hybridization is difficult to produce consistently. Due to the challenges in cultivation, estate owners handle the processing with extreme care. All washing and drying are conducted on rooftops, with freshly harvested fruits processed immediately, ensuring that the washed coffee presents exceptional flavor clarity.

Processing Method: Semi-washed
Altitude: 1760m
Flavor: Juicy notes of grapefruit, blueberry, and sweet orange, with floral notes in the middle, and a persistent brown sugar finish.
Pour-over Parameters
Water temperature 88°C, powder-to-water ratio 1:15. Using a V60 dripper can effectively extract the floral and fruity aromas and layered complexity. Bloom with 30g of water for 30 seconds. For the second pour, add water until reaching 120g, then pause. Wait for the water level to drop until it's about to expose the coffee bed before the third pour. Pour until reaching 225g, then pause to allow coffee extraction. Remove the dripper when the water level is about to expose the coffee bed. Extraction yield: 200-220g, extraction time: 2 minutes.
