From the sweet and rich production area of Central America, El Salvador returns again. This time, we have found the honey process from El Salvador's La Victoria Estate. This estate is located in the Santa Ana volcanic region of El Salvador. Many natural factors make La Victoria Estate one of the most outstanding and excellent coffee estates in El Salvador. The most important of these is the estate's very high altitude, with an elevation exceeding 1,680 meters, allowing coffee trees to grow in suitable temperatures. Additionally, the estate has rich volcanic ash soil and self-sufficient streams. This time, we have selected the estate's Bourbon honey process, which offers wonderful cane sugar-like flavors.

"Honey Process" is currently a quite popular processing method in Costa Rica and an extremely difficult green bean processing technique. The most special aspect is preserving the mucilage that originally belonged to the fruit pulp, covering the coffee beans. Through natural fermentation, and finally absorbing the full energy of sunlight during the sun-drying process, it creates a sweeter, richer taste, with flavors reminiscent of molasses.

The most unique aspect of El Salvador estate honey process is its distinct orange flavor, with notes of milk chocolate and almond upon entry, featuring caramel sweetness and rich oils.

Among the various producing countries in Central America, El Salvador can be said to be the smallest country in terms of land area. Although its production volume is much less compared to other countries, the Pacific sea breeze and volcanic environment provide Salvadoran coffee farmers with unique cultivation advantages and diverse flavor expressions. Currently, the Pacamara variety, often victorious in numerous cupping competitions, was born in El Salvador.

Among the various regions of El Salvador, the one with advantages in soil quality and cultivation height is Santa Ana Volcano, located west of the capital with an elevation of up to 2,381 meters. Santa Ana Volcano, still in an active state, erupted in 2005. Although it caused significant economic losses and some casualties to local coffee farmers that year, the subsequent nutrient-rich volcanic ash provided abundant nutrients to the local soil. Until now, Santa Ana is still recognized as one of the best producing regions in El Salvador.
