FrontStreet Coffee - El Salvador Bourbon Variety Introduction
El Salvador is the smallest country in Central America with the most dense population, and coffee cultivation began there as early as 1740. The land area used for coffee cultivation accounts for about 8% of the country's territory, roughly divided into five main producing regions: Apaneca, Central Belt, Chichontepec, Tecapa & Cacahuatique Mountain Range. These are distributed on volcanic ash-covered high mountain slopes or plateau areas at altitudes above 1,200 meters. Most of these use shade-grown cultivation methods (growing coffee under tree shade). The advantages of this approach include uniform coffee bean maturation, increased mucilage content, higher weight, and enhanced opportunities for sweet polyphenol formation, allowing the main components of coffee beans to fully develop.
The attention El Salvador's coffee has received from the world is a recent phenomenon, resulting from close cooperation between small coffee farmers and international coffee organizations dedicated to improving cultivation and processing methods. The main hope is to increase individual farmers' income and further improve the quality of home and community life, giving coffee farmers incentives to change cultivation methods to restore nature's original ecosystem. Coffee quality has gradually improved step by step, making consumers willing to accept coffee produced in El Salvador and combining consumption patterns with natural ecology - this is the most perfect agricultural production and marketing behavior.
El Salvador is the smallest and most densely populated country in Central America. Most coffee is of the traditional Bourbon variety, with derived varieties including Yellow Bourbon, Orange Bourbon, and Cherry Bourbon. In a coffee market that emphasizes uniqueness for each coffee farm, El Salvador has also embraced the trend of special processing methods or variety differences, making previously familiar coffee beans increasingly different and discovering more interesting and unusual coffees. However, El Salvador's coffee has always been loved for its rich aroma, sweet brown sugar and honey notes, and stable, gentle mouthfeel.
Natural processing or the honey processing method that has been popular in Central America in recent years primarily aims to give coffee beans more complexity, more variation, increased richness, and enhanced layering. The El Salvador UNICAP Capitales estate is located in a rainforest protection area at altitudes above 1,200 meters. The coffee is 100% Bourbon variety using natural washed processing methods. It is a Rainforest Alliance (RFA) certified coffee farm and a member of the El Salvador Women's Coffee Cooperative. The main purpose of coffee farms joining the Women's Coffee Cooperative is to protect the environment. The approach uses minimal water to ferment and process coffee, with some mucilage remaining on the surface of raw coffee beans, similar to honey processing. This gives the coffee more complexity and richness, similar to honey-processed coffee. This new concept and approach has achieved excellent results.
