The origin of coffee was first discovered in Ethiopia, Africa, which is also the earliest place where humans developed. Coffee culture has existed for thousands of years.

Despite frequent wars and conflicts, Ethiopia has never been colonized by foreign powers. Unlike other coffee-producing countries that were forced to grow coffee due to colonization, the Ethiopian people consume more than half of their national coffee production annually. One can imagine how important coffee is to the local population. Because of this, the authorities have even implemented restrictions to increase foreign exchange earnings, including reducing domestic coffee distribution channels and prohibiting free circulation or transportation of coffee from various producing regions to the non-coffee-producing northern areas. This approach is completely contrary to other coffee-producing countries that vigorously promote domestic consumption.

Ethiopia holds a significant position in the world, not only as the birthplace of coffee but also because it possesses the entire spectrum of global coffee flavors. Coffee flavors from around the world can be found in Ethiopia. Yirgacheffe is a renowned specialty coffee-producing region in Ethiopia, geographically located on the eastern edge of the East African Rift Valley. The terrain is relatively complex and fragmented, with Lake Abaya to the west. Since ancient times, it has been a natural wetland with abundant water resources. These natural geographical factors have contributed to Yirgacheffe's rising popularity in the international coffee market.

The term "Yirgacheffe" in the local language means "let's settle and establish ourselves in this wetland." Local residents even believe this area is the site of the Garden of Eden where humanity originated.

Yirgacheffe is located in the Gedeo region of southern Ethiopia. This region oversees relatively well-known areas including Yirgacheffe and Kochere. Because the coffee produced in Yirgacheffe has special, unique characteristics and is widely loved, it has formed its own category in product classification and has always occupied a place in the global specialty coffee market. Yirgacheffe itself is a small town in the Sidama province, with three adjacent small producing regions: Wenago, Kochere, and Gelena Abaya. Because the flavor of coffee produced in these areas is almost identical to that of Yirgacheffe, Gelena Abaya has also been classified within the Yirgacheffe region. In November 2009, Ethiopia implemented new trading and grading systems, adding three sub-regions besides Yirgacheffe: Wenago, Kochere, and Genlena/Abaya, indicating that the flavors of these three regions are extremely delicate and can be further subdivided.

Yirgacheffe is widely favored by coffee enthusiasts worldwide for its naturally unique citrus and fruity notes. Different estates and processing plants have created a variety of different flavors. The climate in the Yirgacheffe region during this period is cool but not cold, tropical yet not hot, rainy but not humid, with fresh and clean air, which has nurtured its unique natural flavor characteristics. It features freshly harvested beans (New Crop) processed using the washed method, resulting in a clean and bright taste with refreshing citrus and floral notes. Due to these unique floral and fruity flavors, Yirgacheffe is very suitable for cold brew and iced coffee, with a refreshing mouthfeel similar to black tea and carrying subtle aromas. For hot water brewing, it is recommended to control the water temperature at 91 degrees Celsius to avoid losing some of the fruity aromas.

Washed Processing Method (Wet/Washed Process)

After harvesting, coffee beans are soaked in water to remove immature beans that float on the surface. The softened coffee is then machine-processed to remove the fruit skin and pulp, then placed in water to ferment for one to three days, during which the surface mucilage separates. Finally, it is dried through sunlight or drying methods until the moisture content reaches 12%.
