Flavor Description: Cream, lemon, muscat grape, passion fruit
The honey processing method best preserves the original sweet flavors of ripe coffee cherries, giving the coffee delicate brown sugar notes and kernel fruit sweetness, while the fruit pulp flavor supports a red wine base aroma, making it very elegant.
Currently in Yunnan, many coffee plantations are paying increasing attention to flavor development during coffee processing. Detailed data management is applied to every aspect including cultivation, forest management, harvesting, preliminary processing, and sun drying.
Pour-over Recommendation: V60 dripper, 15g coffee grounds with 30g water for 28-second bloom, extract at 89-90°C water temperature, 1:15 ratio, medium-fine grind (BG-6W). Second pour to 105g, pause at 135g, wait for water level to drop then slowly continue pouring, maintaining even speed and keeping water level not too high. Final pour to 225ml, total extraction time 2:03 seconds.
Coffee amount can be adjusted according to personal preference, 13-16g are all suitable.
