We should understand what flavors coffee beans might have, and the processing method is the main influencing factor. How can we imagine coffee flavors from the processing process! First, we need to clarify a concept: processing process = fermentation process.

Coffee bean processing is the process of taking coffee cherries from the tree and handling them until they become green beans ready for roasting. This process can also be seen as the fermentation process of coffee beans. Just as excellent wine requires good brewing to produce outstanding flavors, processing methods for green beans are similar - they are treatment methods where microorganisms combine with coffee beans for fermentation, which can guide out the hidden secret flavors of coffee beans!

So what secret flavors do natural and washed methods have?

Simply put, the natural method uses the sun to dry coffee cherries with their pulp and skin intact, which is why it's called "Natural" in English. However, this natural processing method, while seemingly simple, is not easy at all, and its refinement has gone through considerable effort.

Commercial natural processing involves laying plastic sheets on the ground and placing coffee beans directly on them for sun-drying. However, this approach has problems with heat transfer from the ground and unstable heat convection of coffee cherries. If not stirred frequently, there might be issues with excessive temperature rise or uneven fermentation. (You can imagine that beans on top are being sunned comfortably, while beans stuck underneath might develop strange flavors from being trapped).

Additionally, there are many harmful bacteria and contaminants on the ground that can also damage the flavor of coffee beans. Therefore, traditional natural processing produced many inconsistent flavors, and high-quality beans were not processed using this method in the early days because it had a poor reputation and didn't sell for high prices.

However, in recent years, the natural method has made great progress. Modern natural processing mostly uses African raised beds, which effectively block moisture and soil from the ground while increasing air convection. Temperature is also strictly controlled during the natural process to prevent excessive fermentation caused by high temperatures.

The entire natural processing process usually takes more than 20 days, allowing microorganisms to gradually ferment with the coffee cherry pulp, resulting in sweeter flavors with rich tropical fruit characteristics.
