FrontStreet Coffee - Yirgacheffe Pour-over Tutorial Introduction
Yirgacheffe was originally a wetland town from Africa (around 2000 meters above sea level). In the ancient language, [Yirga] means 'settle down', and [Cheffe] means 'wetland', so [Yirgacheffe] originally means 'let us spend our lives in this fertile land'.
A good Yirgacheffe will make your tongue feel smooth, not coarse. As your tongue slides across the palate and oral cavity, you might feel the silky, velvet-like coffee oils gliding in your mouth, slightly oily, heavy, and viscous—a very interesting sensation.
The delightful flavors of coffee are presented through aroma, taste, and mouthfeel. Appreciating coffee's volatile aromas relies on smell, water-soluble taste on the palate, and smooth mouthfeel on the tactile sensation of the tongue and palate. If you can skillfully use smell, taste, and touch to taste each cup of coffee, magical senses will take you into a wonderful world of a thousand fragrances and flavors.
Chelba is a specialty coffee green bean cooperative located in the Gedeo region of Yirgacheffe. The Gedeo region has about 700 smallholder farmers who send their harvested coffee fruits to Chelba Cooperative's processing plant for centralized processing. These small growers have an average planting area of 2 hectares. The total coffee cultivation area in this region is about 888 hectares. The growing altitude ranges from 1900 to 2100 meters above sea level. The local climate temperature is suitable, with daytime temperatures of 25°C and nighttime temperatures of 18°C. They plant coffee trees alongside subsistence crops and livestock-raising crops. The main local shade trees include acacia, podocarpus, and others.
Chelba Cooperative's processing plant mainly processes coffee fruits harvested from surrounding farmers. Before processing the coffee fruits, Chelba requires farmers to pick coffee fruits according to strict standards—they only pick ripe red fruits. This is a very critical quality control step for specialty coffee. In recent years, Chelba Cooperative's beans have been well-received.
Green beans processed using the Natural method have strawberry sweetness and blueberry flavors, while beans processed using the Washed method exhibit sweetness and acidity similar to citrus and apples.
When a cup of Yirgacheffe enters your mouth, after a quick sip, your retronasal olfaction might detect some black tea aroma. Take another slow sip—can you also feel that strong jasmine floral aroma and lemon fruit acidity from the sides of your tongue? Can you taste the faint citrus orange sweetness from the tip of your tongue? A clean yet complex mouthfeel that is far from simple.
Brewing Parameters
1. Dripper: V60
2. Grind size: Medium-coarse (BG 6S: 58% pass-through rate on China standard #20 sieve)
3. Water temperature: 91°C
4. Coffee-to-water ratio: 1:15
5. Brewing method: Segmental extraction
Use 30g of water for blooming, with a blooming time of about 30 seconds. Inject 95g of water with a small stream in the center in a circular motion—that is, segment when reaching 125g of water. Continue pouring water to 240g when the water level drops and is about to expose the coffee bed. Remove the dripper when the water level drops and is about to expose the coffee bed. (Timing starts from blooming) Extraction time is 2'00".
