Estate Introduction

Canet is located in the highest altitude area of coffee cultivation in Tarrazu, Costa Rica.

Caturra is a single-gene variant of Bourbon, discovered in Brazil in 1937. It has better production capacity and disease resistance than Bourbon, with shorter plants that facilitate harvesting. In terms of flavor, it presents lemon or citrus acidity and possesses fruity sweetness.

This area is the most intensive fruit-growing region in Costa Rica. The estate owner primarily grows passion fruit, with coffee production being quite scarce. Coffee is only planted in a specific area with special care, harvesting only mature red cherry fruits.

Raisin honey processing is considered a method of double fermentation honey processing. Coffee cherries are first dried to a raisin-like state, then de-pulped for honey processing fermentation. This method results in more intense fermentation notes in flavor, and preserves more mucilage than other honey processing methods. 100% mucilage honey processing truly offers raisin-like flavors.

This is a rather sweet processing method, featuring white wine mouthfeel and balanced acidity. The fermentation notes are more intense in flavor, and it preserves more mucilage than other honey processing methods.
