Estate Introduction

Canet lies in the highest coffee-growing area of Tarrazu, Costa Rica.

Caturra is a single-gene variant of Bourbon, discovered in Brazil in 1937. It yields more than Bourbon and resists disease better, and its shorter plants make harvesting easier. In the cup it shows lemon or citrus acidity with a fruity sweetness.

This area is also Costa Rica's most intensively planted fruit region. The estate owner mainly grows passion fruit, and coffee production is quite scarce. Coffee is planted only in a specific area, under special care, and only ripe red cherries are harvested.

Raisin honey processing is a form of double fermentation honey processing. The coffee cherries are first dried to a raisin-like state, then de-pulped for honey fermentation. The method brings more intense fermentation notes, and it preserves more mucilage than other honey methods. With 100% mucilage honey processing, the raisin-like flavor comes through clearly.

This is a rather sweet style, featuring a white-wine mouthfeel and balanced acidity. The fermentation notes are more intense, and the mucilage retention is higher than in other honey processing methods.
