Understanding Yunnan Typica
You cannot compare Baoshan Typica with Hawaiian Kona or Bolivian Typica. Their cultivation techniques and maturity far exceed the just-starting Baoshan Typica. The people of Yunnan are also working hard, and cultivation and processing techniques are improving rapidly. It's like comparing the educational level of primary school students with university students—how can they be mentioned in the same breath? But the most important thing is the growth process and the experience and gains summarized during it.
Many people hold no hope for China's Yunnan coffee, which should not be the case. A true coffee lover and practitioner should be inclusive, discovering the advantages and recognizability of coffees from different production areas and tree species. Rather than blindly following those high-scoring beans that are commercially hyped and whose added value exceeds their actual value. Scores are given by people, and the shortcomings of beans can be judged, but their regional characteristics and significance of existence cannot be erased.
Typica: The Classic Arabica
Typica: The most classic high-quality Arabica variety, from which many commercial improved varieties currently originate. It exhibits excellent flavor performance and is recognized as a specialty coffee variety, but has extremely low yield and is susceptible to rust disease, requiring more human management. Typica coffee originates from Ethiopia and southeastern Sudan, and is the most widely cultivated coffee variety in the Western Hemisphere. The plant is relatively robust but not tolerant to direct sunlight, with higher yields in Hawaii. The top leaves of Typica are reddish-bronze, called red-topped coffee. It has obvious floral and melon-fruit aromas, moderate acidity, and higher sweetness.
