High Grade

This batch of Aricha has been rated G1, the highest grade under Ethiopia's ECX system. From the appearance, consistency, and freshness to the dry aroma and flavor, it is exceptionally excellent. (ECX deserves an article of its own.)

Variety

This natural-processed Yirgacheffe Aricha comes from Ethiopia's coffee heirloom varieties. It is produced at the Kebel Aricha processing station, hence the name. Some 650-700 smallholder farmers nearby deliver their ripe cherries here for processing in exchange for cash. After the station screens out unsuitable cherries, the rest are laid directly on raised beds to sun-dry. During the first days of drying they are turned every 2-3 hours to prevent over-fermentation. After 4-6 weeks of natural processing, depending on weather and temperature, workers strip the dried outer pulp by machine before the coffee is transported to Addis Ababa for storage. Beans are normally kept un-hulled until just before export, to protect the quality of the green coffee.

Parchment Beans

The defect rate of these green beans is relatively low for a naturally processed lot, and the aroma is excellent. They ship roasted to a medium-light profile. The grounds show a rich berry aroma with a hint of candy sweetness. On tasting, you get a light, refreshing winelift with the typical citrus aroma threading through a comfortable sweet-and-sour sensation. The aftertaste is like the concentrated essence of orange candy—joyful and bright.
