High Grade
This batch of Aricha has been rated as G1, the highest grade by ECX. From the appearance, consistency, freshness to the dry aroma and flavor, it is exceptionally excellent. (Regarding ECX, the author will introduce it in another article.)
Variety
The specific variety of natural processed Yirgacheffe Aricha is Ethiopia's coffee heirloom varieties. It is produced at the Kebel Aricha processing station, hence named Aricha. There are about 650-700 small coffee farmers nearby who deliver their ripe coffee cherries here for processing in exchange for cash. After the processing station screens the usable cherries, they are placed directly on racks for sun drying. During the first few days of drying, they are turned every 2-3 hours to prevent over-fermentation. After 4-6 weeks of natural processing, depending on weather and temperature conditions, workers remove the outer pulp with machines before transporting to Addis Ababa for storage. Usually, naturally processed beans are stored in parchment form until hulling just before export to ensure the quality of the raw beans.
Parchment Beans
The defect rate of the raw beans is relatively low for naturally processed beans, and the aroma is excellent. The default setting is medium-light roast for shipment. The dry powder shows a rich berry aroma with a hint of candy sweetness. Upon tasting, you can feel a light, refreshing wine-like sensation, still with the typical citrus aroma, creating a comfortable sweet and sour feeling. The aftertaste is like the concentrated essence of orange candy, filled with a joyful and innocent feeling.
