FrontStreet Coffee - Ethiopia Yirgacheffe Konga Introduction
The Konga Cooperative handles coffee beans with utmost care. First, they manually pick fully ripe coffee cherries from the coffee trees, then remove impurities, followed by screening, density selection, and electronic weighing to ensure uniform bean size as much as possible. After washing, they are placed on raised beds for sun-drying.
It is through such repeated labor that the so-called "Yirgacheffe flavor" is cultivated - rich jasmine floral aroma, lemon or lime acidity, along with possible notes of peach, almond sweetness, and tea fragrance.
The washed processing method is a technique these farmers introduced from Central and South America since 1972. Since traditional natural processing easily causes mold growth in coffee beans and is difficult to control, washed processing makes the jasmine floral and citrus notes of Yirgacheffe clearer and more refined.
I always feel that coffee from each origin carries the inherent "flavor" of that land and its people. I have never had the chance to visit distant Africa, nor can I personally experience how the people living there welcome the first ray of dawn on this small piece of land. But whenever I drink Yirgacheffe, I can always feel their smiles, and my mood becomes as colorful as the African continent.
