FrontStreet Coffee - Colombia Finca Santuario Washed Geisha Introduction
For many years within Colombia's specialty coffee farms, Finca Santuario has been a leader in the industry's technology and cultivation methods. The key figure is the farm owner Camilo Merizalde. Camilo was born in Valle de Cauca, Colombia, and often ran to nearby coffee farms since childhood, watching adults process coffee. After graduating from high school, he decided to study in the United States. After graduation, he worked as a manager at a Colombian food and beverage factory in the United States and often had opportunities to return to his hometown Colombia to purchase green coffee beans. At that time, Camilo began to wonder why Colombian coffee often could not compare in quality with African and Central American coffee, and people often did not consider Colombia as a specialty coffee-producing country.
During this period, Camilo began researching and reading books and knowledge about coffee cultivation in the United States, hoping to grow specialty coffee that would amaze the world. At the same time, Camilo continuously searched for farms with excellent microclimate environments in Colombia. It wasn't until 2000 that he finally found the most excellent agricultural land in his heart in the Cauca province of Colombia. At this time, Camilo immediately began various large and small renovation projects within the farm, preparing to realize his ideal coffee farm concept in this farm named Finca Santuario.
Due to the farm's high altitude of 1,950-2,050 meters, large day-night temperature differences, and widespread volcanic ash soil, it is particularly suitable for cultivating these delicate varieties. The third step was to build his own washing processing plant and sun-drying room. The drying room, in particular, features many advanced equipment within Colombia. Camilo first installed large exhaust fans on both sides of the drying room, using the principle of exhaust fans to accelerate air flow, which not only prevents over-fermentation of green beans but also stably controls the temperature of the sun-drying room. Camilo, with his experimental spirit, also improved the washing equipment in the washing processing plant through his cooperation with 2015 WBC champion Sasa Sestic, using stainless steel barrels and rounded corner designs to significantly enhance quality stability and sweetness perception.
Finca Santuario green beans were officially exported in 2005 and have become the preferred partner for many competition competitors to this day. Besides WBC champion Sasa Sestic, 2013 Australian Barista Champion Matt Perger also praised Finca Santuario's green beans highly, combining with the EK43 grinder to win second place in the WBC world competition that year. Through continuous cooperation experiences with these competitors, Camilo constantly tried and experimented with many new methods to improve coffee quality, and from annual cuppings, always discovered the farm's rich flavor expressions and unique varieties.
