The farm owners are Oscar Chacon and Francisca Chacon. The farm altitude is 1550 meters. The Las Lajas farm, operated by the Chacon family, is a certified organic farm in the central region of Costa Rica. This is a farm managed using organic farming systems without pesticides. A university in the United States also sends students annually to learn and experience the organic farming ecosystem. Because no pesticides are used, relatively expensive biotechnology is chosen for disease prevention. In 2000, they pioneered sun-dried processing in Costa Rica. There are two processing systems in their processing plant.
One set of equipment is used for processing their own coffee fruits. Because their coffee fruits are organic, they cannot be processed together with other coffee fruits using the same equipment. Another set of processing equipment is used to help surrounding farms with commissioned processing.
