FrontStreet Coffee - An Introduction to the Mundo Novo Variety

Variety genuinely shapes how a coffee tastes. Bourbon, for instance, is known for its sweetness, while Gesha is famous for its fruit aromatics and tea-like character. Flavor is never determined by variety alone, of course - growing conditions and processing matter just as much - but the distinct qualities of a fine variety are a big part of what made coffee the globally loved beverage it is today.

For a roaster, understanding varieties is essential, because that knowledge shapes how you roast as much as how you taste. Roasting is a physical transformation: over the course of a roast, green beans absorb a great deal of thermal energy, and beans of different sizes need different amounts of time to react in the core. Knowing your coffee's variety and physical makeup is therefore a real advantage, especially when building a blend.

For green bean suppliers, variety is arguably the single most important factor. From the moment a crop is planted, those choices begin to shape flavor development and final cupping scores, as well as the plant's disease resistance, productivity and its demands for altitude and climate.

Mundo Novo

To raise production and fight leaf rust, Brazil brought coffee trees in from Sumatra, Indonesia. After planting, growers discovered that the local Caturra had naturally cross-pollinated with the Sumatran material. When the resulting variety was propagated, it proved to be much higher-yielding, resistant to leaf rust, mellow in the cup and beautifully balanced. It was named Mundo Novo - "New World". Its drawbacks are its slow growth, its taller tree height and the difficulty of harvesting it.

FrontStreet Coffee Recommendation

Mundo Novo is a reminder that a variety's identity is written into the cup - which is exactly what makes Geisha worth seeking out. FrontStreet Boquete Geisha is the easiest way in: a washed Panama Geisha from the Boquete growing region that shows the variety's signature orange-blossom honey, oolong tea character and delicate layered fruit acidity at a very reasonable price.

For something more ambitious, the FrontStreet Esmeralda Red Label Geisha from Panama comes from a single plot at 1,600-1,800 meters and cups above 90 points, with each lot individually numbered. If you would rather explore the variety where it originated, FrontStreet Genlana Gesha is an Ethiopian heirloom Gesha from the Genlana washing station, dried on raised beds for 14 to 20 days and roasted medium-light - bright citrus acidity, elegant ginger lily and ripe-fruit sweetness with a refined finish.
