How to Brew Brazilian Coffee for Best Taste - Brazilian Natural Yellow Bourbon from Santa Luzia Estate

Brazil is the world's largest coffee-producing country, accounting for 34% of global coffee production in 2016. Coffee types are diverse and quality varies significantly: from large quantities of natural processed Robusta coffee known as "conilons" to even larger quantities of natural processed Arabica coffee, as well as other higher-grade coffees processed using alternative methods. These include common washed coffees and pulped natural coffees (known as "honey processed" in Central America), a processing method that lies between washed and natural processing - the fruit skin is removed but the pulp mucilage is retained during drying.
Among the Brazilian coffees featured in previous coffeereview columns, those with higher scores mostly belong to the pulped natural category.
Typically, most quality-blended coffees worldwide use medium-quality Brazilian natural Arabica coffee. Coffee harvesting in Brazil can be done either by manual hand-picking or mechanical harvesting. Before being sent to drying fields, precision equipment is used to separate and process coffee beans of different ripeness levels. During drying, coffee must be layered with moderate thickness and continuously raked.
The dried coffee must also undergo hulling, cleaning, and grading through electronic sorting machines based on weight, size, and shape. The result is beautiful, dense green coffee beans with extremely high consistency, perfect as the base for premium all-Arabica blends. Characteristics include: a certain degree of aftertaste, slight chocolate notes, and rich nutty flavors. The lack of pronounced acidity and brightness is mainly due to the relatively low growing altitude of most Brazilian coffee.
