Introduction to Costa Rican Coffee Understanding Costa Rican Geisha Black Honey Processing
Costa Rica's Tarrazu highlands have become one of the most exciting homes for Geisha outside Panama, and Don Antonio Estate's black honey Geisha - a Cup of Excellence podium regular three years running - is the proof. Below are the lot's full details and a taster's impressions.

"I tasted this coffee bean at the cupping event this summer and was deeply impressed by its rose floral aroma. Now I've finally got it! After brewing, it still has red floral notes and bright apple acidity. The peach flavor is very clear and persists from hot to cold. As the temperature cools slightly, the acidity transforms to citrus notes. The full and silky mouthfeel, like milk, is truly wonderful! The lemon tea-like aftertaste enriches the entire flavor profile. Overall, this is a coffee bean that combines both floral and fruity notes with high sweetness, truly worthy of being the third-place COE competition winner! Complex and layered from hot to cold! Delicious! Delicious! Delicious!"
The Geisha grown at Don Antonio Estate, processed using the black honey method, has clear floral notes, with red fruits and mature lemon acidity. This is a coffee of excellent quality.
Don Antonio Estate won the COE championship in 2017, second place in 2018, and achieved another excellent third-place finish in 2019. The quality remains consistently reliable.
In black honey processing, nearly all of the cherry's mucilage is left on the bean during drying, which takes considerably longer than red or yellow honey and demands careful turning and shading to avoid over-fermentation. The reward is the deep, honeyed sweetness and syrupy body that shine through this lot's florals - the same principle that has made Costa Rican honey coffees famous worldwide.
FrontStreet Coffee Recommendation
Geisha earned its crown in Panama: discovered in 2003 by the owner of the Emerald Estate and entered into the Best of Panama competition, it stunned the judges and took the title with an average cupping score of 94.6, breaking the BOP record. Panamanian Geisha shows distinct orange-blossom honey notes, juicy fruit acidity within fragrant florals, and a tea-like sweet finish. FrontStreet's Emerald Red-Label Geisha (Esmeralda Special, grown at 1600-1800 meters, every batch cupping above 90 points from a single plot such as Jaramillo) and Green-Label Geisha (Private Collection, blended from multiple high-altitude plots at a friendlier price) are the classic choices; the entry-level Boquete Geisha offers the same orange-honey character, oolong-tea texture, and delicate fruit sweetness at an accessible price.
For brewing, treat Geisha as a medium-light, floral-fruity coffee with a hard bean structure that tends to sink and clog the filter: grind to about 78% pass-through on a No. 20 sieve (fine-sugar size), use water at 91 degrees Celsius, and brew 15g of coffee on a small Hario V60 at 1:16 with a three-pour method - 30g to bloom for 30 seconds, then to 125g, then to 225g once the bed drains halfway, finishing in about 2:10-2:20.
If you want to explore Ethiopian Geisha as well, FrontStreet's Granana Estate Geisha from Yirgacheffe, roasted medium-light, keeps pleasant white florals while highlighting orange, guava, and citrus sweetness with a clear finish; advanced drinkers should seek out Geisha Village's Gold-Label (Geisha 1931, 10% of output, meticulous natural) and Red-Label (Gori Gesha, 15% of output, 88+ points on the SCA scale, single-terroir with full traceability), grown beside the original Geisha forest and among the finest hand-poured coffees FrontStreet offers.
