FrontStreet Coffee - Introduction to Cake Dripper

The cake dripper features a flat bottom with three small holes, utilizing the creases of the filter paper to replace the guide grooves of the dripper, reducing the contact area between the dripper and filter paper. This allows water to flow down evenly and smoothly, making coffee extraction more efficient while also slowing down the cooling rate.

Due to the smaller contact area with the dripper, the cake dripper experiences slower heat loss. Because it uses immersion extraction with a longer extraction time, the extraction tends to be more uniform and less likely to result in under-extraction.

Using the cake dripper to brew Yirgacheffe Blue Bell Water Wash coffee.

The dripper has an overall conical shape with a circular base of 4 centimeters in diameter, featuring four evenly distributed circular holes with a diameter of approximately 5 millimeters. Its internal guide grooves are uniquely designed in a ring-shaped step distribution, with one circle after another. I believe this design aims to enhance the richness of coffee brewing and better help brewers control the brewing rhythm. The base features a cross-shaped guide groove line, which effectively creates a certain distance between the base of the cake filter paper and the dripper base, thus allowing more efficient coffee liquid flow and preventing excessively long contact time between coffee grounds and water at the bottom. With four 5-millimeter holes, if its side guide grooves were designed like those of a V60, brewing would demand extremely high water control skills, making rhythm control difficult.

Starting with 17 grams of coffee powder for brewing.

Bonavita cake dripper brewing completed. Measured TDS: 1.22%; Extraction rate: 19%; Total brewing time: 3 minutes. The coffee enters the mouth round and full, with moderate richness; the flavor layers are quite distinct, with some floral notes, followed by lively citrus sweet and sour, and ripe white peach; overall quite clean but sweetness slightly insufficient, with balance slightly inferior to Melitta; the aftertaste is long, with prominent green tea flavor.

The cake dripper is recommended to use a three-stage brewing technique, which is relatively stable in both brewing and flavor performance.
