The birthplace of coffee—Ethiopia.
Coffee trees originated in Ethiopia, where they were initially wild plants. The name "coffee" comes from the Ethiopian town "Kaffa." In fact, many coffee trees in Ethiopia still grow wild today. The coffee beans from these trees are full-bodied and slightly wine-like in fragrance.
Ethiopia is the oldest coffee-producing country. From Ethiopian beans, you can cup test all the flavor profiles of current coffee varieties. It can be said that Ethiopia is the gene bank of coffee—the source of all flavors.
Yirgacheffe is a small town in Ethiopia, situated at an altitude of 1,700-2,100 meters. It is also synonymous with Ethiopian specialty coffee. This area has historically been wetland. In the ancient language, "Yirga" means "settle down," and "Cheffe" refers to "wetland." Therefore, Yirgacheffe means "let us settle and make a living in this wetland."
The citrus-like fragrance of Yirgacheffe has made it one of the most famous specialty green beans in the world. Its particularly gentle yet floral aroma, the lingering fragrance that surrounds the palate, and its smooth mouthfeel—all have become unique characteristics of Yirgacheffe. The flavor resembles a combination of lemon and citrus, with excellent viscosity and complex taste. This variety is mostly washed-processed and is one of the most renowned Mocha coffees.
Strictly speaking, Yirgacheffe is a sub-producing area within Ethiopia's Sidamo province, located on the northwest side of Sidamo. Nestled by mountains and lakes, it is one of Ethiopia's highest-altitude coffee-producing regions. However, the production methods and flavors here are so outstanding that Ethiopian coffee farmers compete to proudly claim their coffee has Yirgacheffe characteristics. Therefore, it became independent from the Sidamo region, developing its own style and becoming Africa's most renowned producing area.
The so-called "Yirgacheffe flavor" refers to rich jasmine fragrance, lemon or lime citrus aroma, as well as peach, almond sweetness, or tea-like notes.
