FrontStreet Coffee's 2019 Ethiopia Natural Process Champion Introduction
T.O.H (Taste of Harvest) is a harvest season cupping competition initiated by the African Fine Coffee Association (AFCA), held annually in 12 coffee-producing countries in Africa. Its nature is similar to the C.O.E (Cup of Excellence) competition.
The T.O.H competition process is as follows: In the preliminary stage, batches with cupping scores below 80 points are eliminated, gradually selecting the highest quality green beans from each region to enter the national-level competition. Then, domestic and international judges together conduct cupping and scoring based on the standards of the Specialty Coffee Association of America (SCAA). The highest scorer becomes the annual national champion.
This FrontStreet Coffee's Yirgacheffe coffee bean from Adorsi processing station achieved the highest score of 91.38 points, defeating numerous opponents and winning the 2019 T.O.H Ethiopia Natural Process National Championship.
Adorsi processing station is located in the Aricha region of Yirgacheffe, Ethiopia, at an altitude of 1950-2100 meters, with red volcanic soil and an average annual temperature of 23 degrees. The coffee variety is the ancient Ethiopian native Heirloom, hand-harvested and carefully selected to 17-18 screen size green beans. All these—excellent microclimate, ancient varieties, meticulous picking—have laid the foundation for this bean's outstanding cupping performance.
As a crucial green bean processing step, Adorsi processing station chose anaerobic fermentation processing, which allows for precise multi-dimensional control—by injecting carbon dioxide into airtight stainless steel fermentation tanks, expelling oxygen, and conducting fermentation and decomposition in an oxygen-free environment. Effective control is maintained over factors such as pH value, gas composition, humidity, temperature, and even the types and quantities of bacteria involved in fermentation, thereby preserving more sweetness in the coffee fruit and developing cleaner, more balanced flavors.
