FrontStreet Coffee - Ethiopia Sidamo Guji G1 Natural Introduction
Background Information
Sidamo Guji is located in southern Ethiopia and is one of the country's few renowned specialty coffee producing regions. These coffee beans rely entirely on natural organic materials from the environment to maintain their growth cycle, using fallen leaves and withered flowers and plants as fertilizer. This completely natural cultivation method has won many awards, including East Africa's "Taste of the Harvest," which is how it became widely known.
Local farmers harvest mature red berries and then send them to the Guji processing plant for processing. The processing plant, located in Sidamo Guji, is operated by Girma Adema. The mature berries are first sent to the processing plant for sorting. During this stage, skilled workers remove immature berries. The sorting process greatly affects the final roasting and cupping quality of these beans. Qualified berries are placed on African beds for natural drying for 15-21 days, requiring turning every two hours to prevent damage.
The special characteristic of these beans is that only fully mature berries are selected and must be sorted and placed on African beds for natural drying on the same day.
This demonstrates the extraordinary nature of green beans from this producing region. The area features towering mountains, highlands, plateaus, valleys, and plains with diverse terrain. The local geology consists of nutrient-rich, well-drained volcanic soil, with a depth of nearly two meters. The topsoil appears dark brown or brown. The greatest advantage of this area is that soil fertility is maintained through the circulation of organic matter, using fallen leaves from surrounding trees or remaining plant roots as fertilizer.
