It also reflects that in today's era of continuously improving green bean processing techniques and diverse processing methods, specialty coffee flavors have entered a stage where a hundred flowers bloom and a hundred schools of thought contend. Meanwhile, the various types of Blue Mountain coffee on the market are numerous and chaotic, with genuine and fake mixed together, making it difficult to find authentic Jamaican Blue Mountain coffee. This has led Blue Mountain coffee to become a memory for coffee enthusiasts because it possesses a perfect balance of acidity, sweetness, richness, and bitterness, with aromatic flavor and a smooth drinking experience that leaves a lasting aftertaste.
Surrounded by the Caribbean Sea, the Blue Mountain range reflects the brilliant blue light from the seawater on its peaks whenever the weather is clear and the sun shines directly on the azure sea surface. Originally, Jamaican Blue Mountain coffee is officially certified and regulated by the Jamaica Coffee Industry Board (CIB) for cultivation areas. The representatives that can symbolize Blue Mountain coffee's origin include six types of certification: Mavis Bank Coffee Factory (M.B.C.F), Blue Mountain Coffee Cooperative Factory (M.H.C.C.T.), Portland Blue Mountain Coffee Cooperative Factory (P.X.X.S.H.), Coffee Industry Association (Wallenford), Coffee Industry Association (St. John's Peak), and Blue Mountain (J.A.S).
Only coffee grown at altitudes of 1000-1700 meters can be called Jamaican Blue Mountain coffee. Those grown at 500-1000 meters can only be called Jamaican High Mountain coffee, while those below 500 meters are classified as Jamaican Prime coffee.
